    Ingredients:
    Spaghetti: 250 gm
    Cherry Tomatoes: 300gm
    Basil: A handful
    Aubergine: 1/2
    Garlic: 3 Cloves
    Parmesan Cheese: 3/4 tbs, for garnish as well
    Olive Oil: 2 tbs for sauce, 2 tbs for Aubergine
    Salt to taste
    Black pepper
    Chilli Flakes: 1/4 tsp
    Almonds: 7
    Method
    Half the Cherry tomatoes
    Finely chop the Aubergine soak it in salty water and rinse well with fresh water.
    Roughly Chop the Garlic
    In a hot pan, add Olive oil, when it's hot, add garlic and about 150 gm of cherry tomatoes. Leave the remaining to use with aubergine. Add salt and black pepper. Cook until tender. Blend the mix with a handful of Basil and Parmesan cheese and a few almonds. Keep the sauce aside.
    In the same pan, add the chopped aubergine and some salt. Cook covered for about 7 minutes, checking in between. When tender, add the remaining cherry tomatoes. Meanwhile, cook the spaghetti. Use some of the spaghetti water with aubergine.
    Add the cooked spaghetti to the aubergine. Add the sauce that you prepared earlier.
    Spaghetti with aubergine with the delicious sauce is ready to serve. Add a swirl of olive oil, sprinkle some Parmesan Cheese and a few Basil leaves to garnish.

    I do apologise that I did not show the rinsing process - After soaking the Aubergine in salt water (for 5-10 minutes or until we finish blending the sauce ingredients) , throw the salty water and rinse it with fresh water before cooking.
