Tried this last night and it was delicious….only thing I would change,is rinse the salt off the aubergine and blot it dry with kitchen roll otherwise the dish is too salty 🥰

In India we have a different recipe almost same way... Marination salt, red chilli powder, turmeric, mustard oil and lime... Outer covering is semi thick batter of chick pea flour water salt carom seeds and small pinc baking soda... Yummmm

Should taste the gi tagged udupi matti gulla...it is the king of aubergine......i think indian baingan bharta n chapati is the healthiest...also with matti gulla we roast them on coals peel and mash add pounded tamarind chilli asafoetida and coconut oil and salt to make a kind of .buttery creation that goes well with anything...
I've been watching Jamie for 10 years now and I love his recipes and I love his whole family bless them, however I can't get over how small portions he makes , one aubergine for a whole family ? why 😀 just why 😀 so little pasta too even when he cooks meat , like one chicken breast for the whle family , I understand that he's cutting on meat however the amount of veggies doesn't substitute the absence of the meat , it has to be waaay more veggies, I remember once he cooked 2 sausages for his whole family 😀 why Jamie ? I love the guy though and I respect him on so many aspects
As an Argentine I'm amazed. I thought we were the only ones to have milanese as a food. I might have been expecting the Italians also have that (since it owes its name to an Italian city) but not the English hahahaha 😅 Whatever, it looks fine. I'd like to try it any day

@ Parmesan isnt vegetarian. The rind has animal rennet in it
@@buckbumble it has eggs also, that's why it's vegetarian but not vegan. You could replace the dairy with some other stuff.
