For the sauce we usually just mix up something from the fridge - tomato sauce, sweet chillie, hot sauce and Mrs Balls. Will try to share a murkoo recipe but I struggle pressing it out so maybe will get someone to help.
I make for .catering I use 1 kg Gram flour 3 cup cake flour I TBL baking powder 1 tsp salt .it's become full inside all my greens an spice eat you use I have.lot Baja herb's in the garden.
If there is left over you can freeze. When you defrost to use, just add a little gram flour or additional bhajia mix to avoid the mixture being too soggy.
I wouldn't advise it. If you add the vegetables, especially onions, they will release moisture overnight and make the mixture hard to work with and can discolour the mixture.
We normally do it without baking powder but showed how it comes out with the baking powder at the end to compare. Baking powder is to your choice (listed as optional in the ingredients list). When using baking powder the bhajias come out fluffier but can soak up additional oil when frying

Yes I think it should be a straight substitution between gram and pea flour.

Quick tip, mix all ingredients first before adding water to see how much water you might need as onions do release a lot of water

We keep our bhajias vegetarian. Eggs will make the batter lighter and the bhajia will come out fluffier.
