    Super great cut work. Californian yellowtail is great. Especially if you catch it yourself. Japanese yellowtail is slightly different as it has a higher fat content. 2 different variants of Amber Jack. Great video!

    Greetings from New Zealand. Yellowtail (or kingfish as we call them) are one of our main sporting species. I think you did a pretty good fillet job. We smoke the frames and heads as well to ensure nothing is wasted. We also avoid freshwater when preparing fish as it promotes bacterial growth. As long as you bleed the fish after catching and are meticulous about hygiene when dealing with the gut cavity, there is no need to wash anything down.

    Do you recommend freezing the fish for a day or two before making sushi in order to kill any parasites?
    Btw, love your cleaning job, much respect for the fish.

    Gonna give your dog round worms dude. Allows freeze the fish for at least 48 hours at -10F or 7 DAYS at 0F or risk getting parasites.

    You could use the fish bones for stock, its a traditional Japanese thing.
