Vietnamese Beef Noodle Soup (Phở)

  • I am sharing how to make old school Phở. Phở is Vietnamese Beef Noodle Soup aka as national dish of Viet Nam. Even though the process to make old school Pho using the traditional takes 24 hours, the actually labor time only takes 2 hours. Spending 2 hours to make 12 big bowl of amazing Phở, free of MSG, is so worthy.
    MAKE:
    - 36 cups of Phở's broth = 12 big bowls = 3 to 4 meals for family of 4
    INGREDIENTS (NGUYÊN LIỆU):
    - Beef Leg Bones (xương bò ống): 8 to 10 lb (4 kg)
    - Beef Brisket (nạm/ức bò): 3 lb (1.3 kg)
    - Beef Ribs (sườn bò): 6 lb (2.7 kg)
    - Beef Meatballs (bò viên): 2 small bag (bịch nhỏ)
    - Sweet Onion (hành Tây loại ngọt): 2 large or 1.5 lb (720 g)
    - Ginger (gừng): 1/2 lb (250 g)
    - Rock Sugar (đường phèn): 9 oz (260 g)
    - Salt (Muối): 5 tbsp + 1 tsp (5 mc + 1 mcafe)
    - White Pepper Powder (Bột Tiêu Trắng)
    - Phở Spices (Gia Vị Nấu Phở): Please see video (xin xem video)
    - Fresh Rice Noodles (bánh phở tươi): 1 to 2 bags (1 hoặc 2 bịch)
    - Thai Basil (húng quế): 1 bunch (1 bó)
    - Thorny Coriander (ngò gai): 1 bunch (bó)
    - Cilantro (ngò): 1 bunch (1 bó)
    - Green Onion (hành lá): 1 bunch (1 bó)
    - Bean Sprouts (gía): 1 small bag (bịch nhỏ)
    - Lime (chanh): 1 or 2 (1 hoặc 2)
    - Sweet Onion (hành Tây ngọt): 1 small (1 trái nhỏ)
    - French Bread (bánh mì): 1 or 2 (1 hoặc 2)

    This is by far the very best video I have seen for making Pho! Thank you so much for your in-depth and step by step tutorial! I had tried making clear broth other times but failed with the information given. I was so happy to serve this to my family tonight, I had a beautiful clear broth and the flavour is delicious.     WOW. This is without a doubt THE best pho recipe I’ve ever seen. Beautiful color, perfectly clear, and amazing tips that I’ll be using. I can already tell the flavor is amazing. And what a genius idea to use the ladle to push away the fat to keep the pho flavor

My bestie loves my Pho recipe because she was able to plan it into her busy schedule by starting the process before she goes to work on Thursday morning and again on Friday morning. By the time she gets home from work on Friday afternoon, her giant pot of Pho is ready for her family to enjoy and still have leftover broth to freeze for emergency days.

    I have tied pho about 5 years ago for the first time, now I can’t live without it. With my nausea in my pregnancy, this is the only food I want to eat and don’t feel nauseas afterwards. And it’s so easy on my digestive system! I’ve never tried making pho before. But I want to learn to make it. Pho is literally the best dish that exists! Thank you for your recipe!

    Hands down the BEST pho video out there and I've watched a ton!!! LOL! Nina, you have a passion for Vietnamese food and it shows. I love all the details and the thoroughness of your videos. You have a perfection gene that I really dig. :) I love that you don't take shortcuts, either. I'm not saying I'd follow all your steps because they can be tedious and time consuming, but I love knowing the correct process of how to do something even if I end up choose to go another route to get there.     Wow! The aroma that’s running through my house right now is amazing! Chi Nina really help me succeed this dish. I really enjoyed how easy this process was. I barely had any scum just as she mentioned in her video. Make sure you keep all the fat in the pot! It’s very important because as she mentioned, it helps keep the beef fatty flavor locked in, however, you don’t need to actually eat the fat. This recipe and process is much easier than I thought. Well done chi!

    Good video. I’ve watched my friend make pho for two decades and I’ve been cooking it myself for 10 years and it’s very good to see you take the time to share all your detail and explanations. Even a seasoned cook in pho will gain something from watching this. I bet you made your own meatballs, they look better than the store bought frozen ones. Chuck roast also works and you can make a pot roast with the broth in the oven 3 hours before serve as another meat option, people really love it for the same reasons brisket is popular.

      Why Enigma Cooking Pho is like a therapeutic experience for me and my family. We just go about to do our things. There are only 3 times we really need to pay attention to the pot ... the rest are just soaking and simmering times 👍.       Thank you so much! Hopefully you will give it a try! After a few times, you will find the process is actually work out very well for busy people. My bbf said she planned it out and it worked perfectly for her schedule. She started out on Thursday evening right after dinner by soaking the bones and meats. And on Friday for 2 hours before she went to work. By the time she got home from work on Friday, she only needed to spend 1 hour more to have amazing Pho for her family dinner, Saturday and Sunday brunches. She said that was about the same amount of time if she used IP so she would rather made Pho using this method for a giant pot with full body of beef broth.

    Is cooking 1 hour for the beef brisket in low heat boil good enough? I don't want mine to be too soft.

      Really depend on your stove my dear! Give it a try! Start with 1 hour and see if you like the texture! Add more time if it is still tough hehehe.

      Yep hehehe ... my hubby learned how make Pho from a sister who was from North VN so he enjoys his Pho with bread. My brother in law was from North VN too and he has to have bread for his Pho too lol.

My father's family is from the north but we never ate it with the fried breadsticks, something I didn't know was a thing until youtube. We eat the fried breadsticks with our banh canh, for sure.

      @@khanhnhudo4305 Nếu nói tới phở bò thì công thức này là chuẩn nhất đó em nhưng chị không biết có lời nhiều hay không bởi vì giá thành của nguyên liệu có thể hơi cao cho kinh doanh. Đây cũng là tuỳ theo cách kinh doanh của em nhé. Nếu em là mẫu ng kinh doanh có tâm, lấy công làm lời để khách có một tô phở tuyệt vời khi ăn xong sẽ nhớ đời thì em nấu theo công thức này của chị. Có đều là chị không biết nấu theo công thức chị em sẽ kiếm được bao nhiều tiền lời nữa. Hay là em thử nấu một nồi như chị rồi coi gía thành ở Nam Định là bao nhiêu rồi quyết định em nhé. Em cũng nên coi kênh của Bà Bán Phở và Natha Food, hai chị bên đó có chia sẽ cách nấu phở kinh doanh. Chúc em thành công nhé! Và em có thể hỏi chị bất cứ gì nhe!
