I had to watch hours of TH-cam videos to find your video, but when I did, it made it all worthwhile. My favorite pho restaurant in Saigon was Pho 2000 (where Bill Clinton ate.) Their pho is dark from the abundance of spices, rich, and I think they use some fish sauce in their recipe. There were several other good places, but if seeking the Saigonese pho flavor, yours is hands down, far and above, the best pho making video on TH-cam. I've been working on my recipe for some months after finding your video. Taking your advice, but differing from your recipe; I do not use any cumin seeds, more anise, more fennel, more cardamom, slightly more clove, less cinnamon, less peppercorn, 2 tbsp fish oil (Red Boat). I am also currently unable to find black cardamom pods locally, but green taste the same as far as I've gotten used to. I char the ginger and onion & shallots on my gas grill. Then it's about 12-14 hours bubbling slightly slower than you show (fewer bubbles coming up.) I like your boiling off the color trick with the spice bag. I also like the way you soak the way you do your meat as thin as you can before tenderizing it and the way you tenderized that tendon in the salt water bath. Wow. Those are the kind of cooking tips I really appreciate that you won't find from most people; even pro chefs and cooking classes. Yours is the real deal, seems like you've enjoyed some major family pho brewoffs. Thanks for posting this. The world needs real pho.

This is most authentic as you can get. Glad you don't put coriander leaves, lime leaves, seared your Tai, add egg and garnish with ginger. MMM im going to have tribe in mine. Enjoy having pho at home cos i can control how i want it to taste, ie more black cardamon and 5 star anise makes the flavour more intense

@@HeomeoProductions I respectfully disagree. Fennel has a taste more similar to aniseed which is similar in taste to star anise. Cumin has a taste which is quite different although both spices look the same. Furthermore, although I was aware of it before posting, cumin has a smoke flavor versus fennel having a liquorice flavor. It's EASY to assume that one is using cumin at first glance, but using cumin will totally change the taste of traditional pho.
