My mother used to wrap the herring in old newspaper and burn it under low fire, which easily removed the skin. Next, she would soak it in water with freshly squeezed Lemon or lime juice, rinse, and season with her favorite fresh herbs and seasonings.
Hi Tina.. I remember mum use to put it on the stove to separate the skin from the flesh then puck it. Dont know if you do that with the herring that is already smoked...however cou cou and red herring is a bomb!!!

Wish I could find a good fish market around here somewhere, but there is none that I know of, we may have to travel all the way to Orlando to find fresh fish unless I can get my husband to go fishing.

Hi, you do not have to boil the okras. Second you have to boil the red herring that way all the bones and skin will come off. I think you have to cook the cou cou three times at five minutes each. I cook my cou cou all the time. Baja said don’t add garlic powder only salt. I guess to each his own.

Hi Tina, I tried your recipe but I cut it in half to make a smaller portion. My dad, who owns a cou cou stick, was skeptical about the whole microwave business but was pleasantly surprised! I was born in Canada so “baby steps” for me 😆. Like your daughter, I’m not playing around with no fish head and thing so I made a gravy with tin red salmon instead LOL. Good evening my darling, you made me laugh when you said I gonna taste the herring to see if it salt (of course Tina) i went to buy some yesterday at the store to cook with some cou cou but they never look good so I left them. What you need to do is to singe the skin comes off easier and it's best to soak the herring it helps the fine bones to come out easier and of course it takes salt out but not too much. Do not boil because it takes too much of the flavour away. I've done it before and I just soaked it and it was fine. You really do add a lot of seasoning to your food. I think the herring flavour speaks for itself. I dont have a cou cou stick and I still make mine with a wooden spoon it still works. I have never seen cou cou done that way, more seasoning and in microwave it's a first!!!!I. Not for me I am old school lol. If you soak cornmeal before it would never be lumpy when you add to okra water. more seasoning Tina, in cou cou, Lawd!!! I am sure it tasted great, looks great. Thanks for sharing. Hello! I made the microwave cou cou today. Initially I was skeptical but it came out good. Will be my go to method from now on! I made mine with salmon gravy but I added a little liquid smoke to give it that smoky taste! I used to hear my Dad talk about frizz fish? Pounded, smoked salt fish I think he said. Do you know anything about what it is? I could never get a recipe from him and my Mom was not familiar with it.

Tina dear just tried the recipe with some Icy Point Salmon gravy came out flawless.Only thing I would do differently is to used fresh okra which I didn't have only frozen but it tends to change the color of the cornmeal.

Smoke herring is very tasty.My mom cooked it for us as kids but I never remember her taking out the bones cause the bones already dried so it won’t hurt you
Apparently I was suppose to soak it first. that soften the herring up which made the bones come out easier. Even though the bones wont hurt you, you still have to pick those big ones out. You probably don't remember you mom taking them out but I'm sure she did. Thanks for watching.

Tina, lol, I don’t believe you said to put away the Cou Cou stick, now you are becoming like the microwave generation, heehee 😉 I have done cou Cou in the microwave before but don’t think I blended it in the blender, it has been a while. My favorite things to eat with Cou Cou is salmon, steam flying fish and herring. Tina it looks really good the only thing you forgot was a little butter 🧈 in the gravy and the little hole on top of the Cou Cou. Good job I can definitely have some.

Coucou and red herring🤩✅prepare to use the wooden spoon tried it in the microwave found it got hard as it cools even when I reduced the cooking time but yours look fine..thank you can’t get thru the week sceptic for the coucou fix😂my children are fussy but one grandchild would eat anything I cook (not🤣)

Love this tutorial. I tried to make this as a young bride and it started to get lumps. I was devastated. i let it cool and put it in the food processor to smooth out and then back to the stove. I wanted to prove to my then husband it wasn't that hard🤣well he had the smoothest coucou ever that night. I did confess but ive steared clear of that recipe ever since. Hi Ava, Cou Cou is something you either like or hate, I hated it growing up now I love it. The herring I have not eaten in years, so I had to try, mess it up a little because some people said I needed to swing and soak it, however it came out tasting nice no complains. happy independence

Our grandparents we can look back and appreciate them and the things their did. Our grandparents did not have a lot but their used what they had wisely including making delicious dishes from barely anything.

I make my Cou Cou the Original Bajan way and will never change as long as i have strength to stand up at my stove. This process is too long. From boiling the Okras to stirring it is only about 15mins depending on how much cups you're making. If you don't know any better i guess you can do it her way. Good luck 🙏🏽
Denys, the original way will always be the way to go but sometimes if time is not on your side this is just a quick way to enjoy the same meal tasting exactly the same way.
Regina it's not the Bajan way of course, it's just a different way if you want a quick meal without going through the process of stirring. If there were microwaves back then I'm sure people would have used them. But of course we know you can never beat the real thing. 🙂

Tina dear just tried the recipe with some Icy Point Salmon gravy came out flawless.Only thing I would do differently is to used fresh okra which I didn't have only frozen but it tends to change the color of the cornmeal.

I just make cou cou the way you did it in the microwave. I also make sardines in tomato sauce for the gravy. I was delicious. I love you.

Smoke herring is very tasty.My mom cooked it for us as kids but I never remember her taking out the bones cause the bones already dried so it won’t hurt you
Apparently I was suppose to soak it first. that soften the herring up which made the bones come out easier. Even though the bones wont hurt you, you still have to pick those big ones out. You probably don't remember you mom taking them out but I'm sure she did. Thanks for watching.

Tina, lol, I don’t believe you said to put away the Cou Cou stick, now you are becoming like the microwave generation, heehee 😉 I have done cou Cou in the microwave before but don’t think I blended it in the blender, it has been a while. My favorite things to eat with Cou Cou is salmon, steam flying fish and herring. Tina it looks really good the only thing you forgot was a little butter 🧈 in the gravy and the little hole on top of the Cou Cou. Good job I can definitely have some.

Yes I got a lot of messages telling me I should have soaked it, so boiling it would be perfect. Its quick and easy, you will enjoy it.

Hi Gloria, of course nothing can beat the old fashion cou cou with stick, the microwave is just a quick way if you don't want to go through that process. I am wondering why yours got hard, did you put enough liquid and did you cover it in the microwave. these little things makes a difference. You must give it another try and see. Love this tutorial. I tried to make this as a young bride and it started to get lumps. I was devastated. i let it cool and put it in the food processor to smooth out and then back to the stove. I wanted to prove to my then husband it wasn't that hard🤣well he had the smoothest coucou ever that night. I did confess but ive steared clear of that recipe ever since. Thanks to you I will be making my own coucou from now on. Did you use the fine cornmeal?
Hi Mama, stirring cou cou is not the easies thing to do, but you were very inventive, what a good idea I'm sure he was just happy with a good bowl of cou cou and not interested in the way it was made lol. Making cou cou in the microwave is a quick and easy way without all the stirring. The meal I used was a fine cornmeal you can find in any supermarket. Thanks for watching.

My mother used to buy the Herring without the skin and bones so you can get it that way. I think my mother used to soak it; I don't remember her boiling it. Hi Ava, Cou Cou is something you either like or hate, I hated it growing up now I love it. The herring I have not eaten in years, so I had to try, mess it up a little because some people said I needed to swing and soak it, however it came out tasting nice no complains. happy independence

Why butter in the bowl? All you need is a little of the Okra water that they were cooked in. Because it is slippery enough make the ball.

Our grandparents we can look back and appreciate them and the things their did.

Girl rinse under running water then boil the smoked herring it will soften up and will be able to lessen the salt taste

you have to roast it on the stove the bones would come out easy then you can soak it or boil it and then make your gravy

I make my Cou Cou the Original Bajan way and will never change as long as i have strength to stand up at my stove. This process is too long. From boiling the Okras to stirring it is only about 15mins depending on how much cups you're making. If you don't know any better i guess you can do it her way. Good luck 🙏🏽
Denys, the original way will always be the way to go but sometimes if time is not on your side this is just a quick way to enjoy the same meal tasting exactly the same way.

Regina it's not the Bajan way of course, it's just a different way if you want a quick meal without going through the process of stirring. If there were microwaves back then I'm sure people would have used them. But of course we know you can never beat the real thing. 🙂
Herring is too salty unless you soak it out and they're not as tasty.
