I had thinner cut chops so I knocked the sear and over times down to 2:30 on each side and 11 min at 350. I had marinated them in olive oil, garlic and sea salt overnight. Were absolutely fabulous, so much so it reminded me of the chops I had in Spain. Thanks you!
After five minutes on each side, I then move them to the oven for 25 to 35 minutes, depending on the oven temperature and thickness of the chops. I highly recommend a meat thermometer. Sometimes I’m unsure with a meat like pork and having that extra information makes me feel more confident.
It totally depends on the thickness and how well do you like them done. If they are on the thicker side I do 35 to 30 minutes. You can check after 25. Dial that back a bit if they are thinner pork chops.

I have made these pork chops in an iron skillet also with great results. Once you get the skillet seasoned well it’s a pretty slick surface and nothing sticks. Enjoy!

I would take them two pork chops and put a pork chop in between them for a pork chop sandwich. Man that looks good

Medium, but let the pan get hot before adding the pork chops. Enjoy!

I have a gas stove now and much prefer the heat control over the glass top stove I had when this was filmed.
At what temperature do they go in the oven?
I’ve used 350 and 375, and I prefer 375 for 30 minutes. This is of course after searing 5 minutes per side.

My experience is that a shorter cooking time at a higher temperature keeps them from drying out. No video needed for that. LOL
