    I love how most these 18 century recipes are 80% extreme vague, 10% comparable to modern recipes, and 10% bizarrely specific about things that don’t even matter

    • @effigytormented
      @effigytormented 2 ปีที่แล้ว +28

      Shows you how much more . . i would say independant, but don't take in the same spiel as other modern people may. It was just traditional ubiquity. The classic "well, we've always done it this way." So thry were writing for an audience that were assumed to know the basics because it was, i dunno if cultural is the right word, just the most practical i guess.

    It's funny thinking about old times, flour was one of the few things they could always get some more of, and that was worth playing around with.. so you get pasta in all manner of shapes, you get pie crusts with elaborate comical forms, specially shaped buns, pretzels, you could try something new and not risk wasting it because it's going to taste good regardless.

    The chemistry is great, here! Watching Jon watch over Joe, sort of feels like a loving father teaching his son a craft. The two are probably of similar age, but the wisdom that Jon holds in this type of activity, truly makes him a father-type figure, here. Bless you both, and may the new year find you well.

    Please continue partnering with Mr. Pera. I was a fan of the show before, but I'm an even bigger fan now. I often found it difficult to recommend a period cooking show to friends, but once I learn they're a fan of Joe's, then it becomes a real easy gap to bridge.

    That outro scene is hilarious!!! John looking to the side as he freeze frames for the outro was such a nice touch and I love the recipe, never really thought about pies having bones in them but it's a wonderfully delicate way to cook something.

    I'm a poet and I get a poetic feeling watching this channel. I am also an artist and it's also very artful experience to be part of modern but passed experience in one place. I use to work for a local museum in my hometown. I was trained how to behave like the people from 1800's and 1700's. I loved it so much I volunteered right after I graduated highschool. I had a part time job and volunteered to study at the museum.

    Yup. More Joe Pera please!! One of the biggest factors of living in the time frame that is depicted here was that things took time, there was literally and I mean literally nothing else to distract you from the task at hand. Whatever time it took to do something is the time it took and that was your focus, that's ALL, your focus was. I feel there should be an episode to emphasize that fact that you had so much time on your hands, and yet, it took so much time to do much of ANYTHING at all!

      DO keep in mind, there was ALOT of work to be done. I was thinking to myself that this pie took WAY too long for just a side dish. And just like all chefs, they would have been using the baking time to make other things, not sit around and watch the oven do oven stuff.

    I know this channel started as kind of a instruction manual for Townsends products, but it turned out a whole bunch of people (myself included) tune in for a sheer wholesome experience. The gentle pace and the warmth of the presentation (both visually and in the hosts) is just healing in these fast paced times.
    Also the dynamic between John and Joe is just so fun and entertaining. Really hope there'll be more of them together. One of my favourite episodes ❤

    That talk of skinning an animal, reforming its meat ans stuffing it back in the skin reminded me of a couple of dishes from Eastern European Jewish cuisine that my family still makes, and a lot of other families too. One is filled goose neck (pretty much what you described) and gefillte fish (stuffed fish, same deal). So it's not as crazy as Joe might think.
