  • Nothing is better than caramelized oven roasted carrots. Its an easy holiday side dish as well as a perfect thing to make any night of the week. I'm going to show you how to roast carrots in the oven and how to fancy them up by using the carrot tops as a garnish. This is how you should be eating for the holidays in 2018. Perfect for Thanksgiving, Christmas or any holiday you celebrate perfect for the vegetarian in you family.

    This was so good! I watched this and made it right away. At 450 in a connection oven it took me about 30 minutes. I'm going to try 500 next time to get a better char.
    The finishing sauce is SO easy to make and it made the carrots taste amazing! They would have been bland before, but the lemon and parsley really woke it up.
    I'm kicking myself because I didn't start making it sooner. Will definitely be adding this to the rotation. Thanks for the video!

    Everyone wanted more. I made a double batch, and my 84 year old Mom, who gets full on 1/4 c of soup, had three helpings. I made 2 versions of twice baked potatoes. Yours and a dairy free version. I used margarine, cashew milk, and extra sharp cheddar cheese. She loved it. She ate the whole thing. I'm finishing off the only 2 carrots left now. This is the first time I've hosted christmas at my home, and I purchased your "Not Another Cooking Show Holiday Plan of Attack." I had it printed into a spiral book. Thank you for having ample margins on your pdf. I followed your directions for the Chauteubriand Beef Loin. It turned out amazing. Thank you for putting this together. My mom said she was really proud of me and thanked me for taking on such a big ordeal. With your book, cooking your recipes, with the step by step instructions .. it was pretty easy.

    I made this recipe a couple days ago and loved it. Today I got my hands on some locally sourced sweet sausage that I wanted to make a brunch burrito with. I ended up using the garnish recipe with a few tweaks - added some garlic, onion, a little white wine vinegar and such. 🔥 I even threw in the leftover carrots into the mix. Mhmmm.

    This is a very well put together video and your instructions are spot-on. there's so much flavor in roasted vegetables that we don't even boil anymore.the lemon zest part of something that I have never tried but I'm definitely going to cuz that sounds fantastic.

      Thank you so much! Yea, you could blanch them quick and then roast to quicken up the process but no need to boil them for the cook I find. Roasting concentrates flavors in a way boiling just never will.

    Tried it out on my family tonight (including 3 year old) and they loved it! I didn’t have lemon though, so I used lime juice and orange zest and it was still great.

    I gotta be honest, I just tried the roasting part and not many carrots are left for the carrot tips part…😅..thanks so much for providing a simple recipe to something that was so hard for me to achieve in the past! 😂🙌🏽🤩. Tip for anyone who has a double oven though, 450 was super high in the top (smaller) oven for ours, so I lowered it to 430 cause that thyme burnt to a crisp right away 😅.

      Farmers Markets are a great way to build relationships with local farmers/producers. I also get cheese/spices/sauces from mine too! Typically they love to talk to you about their product and if you're not sure what to do with something (like a new cheese or sauce) they usually have good suggestions!

    Roasting vegetables is always a great way to add taste and colour. If you have more colours like you here it is even better.Just one thing, those are not baby carrots. Thank you for sharing. Happy day everyone

      Thank you! The small ones are young carrots...baby carrots, young carrots, same difference. Baby carrots are just ugly large carrots whittled down to a uniformed shape.

      It is possible that in your country you call them that, I did not know. Here in New Zealand, we call baby carrots really small carrots. Both are tasty that is what is important. cheers
