I’ve dehydrated my squash since my husband doesn’t care for it. I make it into a powder then add to lots of recipes.I grated some yellow squash and zucchini and made yummy pancakes with it.

Meg, on the Hollars graded her squash and measured out amount needed for double batch of zucchini bread and froze it in freezer bags. She did about 50 bags as her family is large and loves it. Just passing her tip along. Also want to express my sympathy for the loss of your father. Hope you are feeling better.😃

I have frozen squash and been very happy with it. Use prime young ones, slice, blanch three minutes, cool in ice water, pack and freeze. Cook in a skillet with onion and water and it is delicious. Using the young squash is critical. Those big seedy ones- or even mid sized- need to go to the chickens, as someone else suggested.

My grandmother made a sweet relish with it. It was like a bread and butter squash.

I simply limit how many plants I grow. It takes so much space and brings the worst pests. I plant only 2 plants of summer squash and I have more than enough to eat fresh several times a week, I freeze zucchini bread loaves, muffins and then I freeze no more than 12 two-cup portions flat. I will use it for fritters (a good meal stretcher) or casseroles. This saves more space for winter squash that stores better.

Always thought HarvestRight freeze driers were an overpriced investment until I discovered the fortune we’re expected to pay this winter for light, heating, bathing, flushing and cooking. 😂
Might sell a cornea and kidney to make ends meet!🇬🇧

Praying some day for a freeze dryer! I have found my favorite way until then. Wash your squash, slice, rinse again, and layer the slices between clean towels to absorb most of the moisture from washing. Place the dried slices in a vacuum sealer bag and vac seal. Easy peasy, no blanching, and I promise they taste freshly picked, IMO. I've been doing them this way for 6 years so I feel safe sharing.

I enjoy my freeze dryer, too. Makes planting a garden worth while. Nothing goes to waste.i am going to cook a bunch and then freeze dry it. Then I only need to rehydrate and heat it up.

On those squash slices add a sprinkle of ranch dressing powder or brush with lemon or lime juice and sprinkle with taco seasoning. Great for snacks or to cook with. Sending hugs and blessings.

I julienne mine on a mandolin. Freeze it in 4 cup portions, and we make a squash casserole with it. We tried a batch of squash chips in the Freeze Dryer, using different seasoning on each tray... the Ranch ones were a hit, I liked garlic and herb... plain was a little boring.

I use an electric knife to cut the corn off the cob. I use a very large stainless steel bowl, turn a smaller one upside down inside the big one, stand the cob on the upside down bowl, cut corn with the electric knife, corn falls into the big bowl. When using the electric knife the corn doesn’t pop all over the place as when using some of the other tools. For that creamed corn made with that gadget you have, add corn cut off the cob as kernels.

We peel them and then clean the seeds out and then put it up in to 1inche pieces. Then we put it in a food saver bag and food save it and then put in the freezer. We then use it all winter long.

Last spring, I washed the squash, dried, and sliced it. Then put the pieces inside a bag, and food saved each bag. I haven't pulled them out of the freezer yet to use. I'll have to pay attention when I use it to see how the skin is.
Gosh, I haven't had creamed corn in ages. I was 6 years old when I last had it, that was 54 years ago. Boy I'm aging myself😊

I half expected to see Ben using a bundt pan tube to cut the corn off the cob as part of the test. There's been several this year I've seen doing that, pushing cobs down its throat. Seems to work.
The squash looks wonderful. So glad that worked for you.

Freeze dry zucchinis to make zucchini chips. So yummy! Also you can powder FD zucchini to substitute for flour

Check the screw that holds the blade on the wooden corn cutter you like. You can lower the blade that is only used to do while kernel corn, even remove it completely since it’s not needed for creaming corn. The creaming parts are only the teeth to open the kernel and the scraper bar. Works great for me.

My Mama taught me to cook squash as if you will be eating them...in a big skillet with lots of onions, bacon grease, salt and pepper. Cook it to death until browned and cool it completely then put in freezer bags and freeze. When you want squash, just thaw and heat! I like to dice and can for squash casserole.

    • @deborahlawing2728
      @deborahlawing2728 2 ปีที่แล้ว +1

I cook mine for a casserole, as well as the carrots, onions, and peppers. Put in zip top bags and place in the freezer. When you are ready to make the casserole just thaw, add sour cream, cream of chicken soup and stuffing crumbs mixed with a little butter on top. Pop in the oven at 350 for about 30min. Make sure topping is golden brown. Everything is already cooked so you just need to make sure it's hot all the way through.

????? Have you tried scoring the skins with a fork (or similar implement) before you dry them (using whatever method)? That can help. Just wondering.
Freeze drying is admittedly great......however some of us can't get there yet.
    Just some thoughts. 🥰🥰🥰

I use a Pampered Chef Corn Cutter, I use the blade part to cut the kernels. Then I turn it over and use the back of it to scrape the cob. It turned out perfect as creamed corn with whole kernels in it. Are you using Esau sweet corn?

My options only! When you cut that squash open and called it pretty decent, I couldn't stop myself from pulling a grimace. I'm sorry! That would be chicken feed in my family. No wonder it's mushy and unappetizing after it's frozen. I pick them half that size. The seeds are barely formed. Same goes for cucumbers. Try a couple of jars or a freezer bag of them and see if you don't like them better. Even if you have to plant more to get the amounts you want.
