My mother used to make pastelon when I was small. I am not a fan of platanos maduros " latino card revoked " I know .....but we would literally have a full house with everyone asking for 2nd's !! It was like a new years party on a saturday afternoon !!! Brings back good memories . This was a common dish in my family in PUERTO RICO back in the 80s but then I did not see anyone making this up until now.

I boil my sweat plantains with a little sugar and Cinnamon sticks.. then I smashed the plantains and add carnation milk and butter and then do everything else like you do...Sometimes the plantains come out to oily and then u add cheese so that’s more oil your consuming... you can also make it with mashed potatoes which is kind of like a Shepard’s Pie.. So you basically make a smooth mangu but with sweet plantains and you layer it the same way with your meat and cheese.
I just had my first ever Plantain lasagna and it had crushed boiled eggs in layers. Trying to get the recipe (keeping it to myself tho ;P) It tasted amazing

I made it using daiya mozeralla shreds, gardien crumbles (add your own seasoning, sofrito etc) and earth balance or miyokos butter (I made it boiled and mashed or you can fry like in this vid) dominican food is very easy to veganize and taste superb

Yep. most definitely. I do that all of the time!
Does it taste like lasagna or does it have a sweet taste?
It doesn't quite taste like lasagna. It's much more savory and the sweetness of the dish depends on how ripe the plantains are. Hope that helps!

I would just use the vegan crumbles, like Beyond Meat brand.

That's called a Shepherds pie.... They all fall under the lasagna style/format... ground beef cheese and what you use around it...
