    Ingredients:
    4 cups of sliced squash (kadoo)
    3 tablespoon oil
    1/8 teaspoon asafetida (hing)
    1 teaspoon cumin seed (jeera)
    ½ teaspoon fenugreek seeds (dana mathi)
    1 tablespoon coriander powder (dhania)
    1 tablespoon coarsely ground funnel seed (saunf)
    ½ teaspoon turmeric (haldi)
    1 teaspoon chili powder (pisi mirch) adjust to taste
    ½ teaspoon paprika (dagi mirch) provides a nice color
    1 teaspoon salt adjust to taste
    4 whole red chili (sabut lal mirch)
    1 tablespoon shredded ginger (adrak)
    1 tablespoon lemon juice (nimbu ka ras)
    1 tablespoons mango powder (amchoor)
    4 tablespoons sugar (cheeni)
    2 tablespoons chopped cilantro (hara dhania)

    hi Manjula ji your spicy squash recipe is excellent. i had a pumpkin growing in my backyard by accident i picked it a little early. it was not totally orange inside but this recipe worked great with it.

    hello aunty, the recipe looks wonderful. But is squash sweet in taste? like does it have a natural sweetness to it? I have never tasted squash and me and my husband both like spicy food so that is why I m asking. thanks again for an amazing recipe. looking fwd to hear from you.

    Manjula, I have fenugreek powder can I use this instead of fenugreek seeds? Do I use less of the powder if I do? I cannot wait to make & eat this, Thank you!

    Hi Manjula, I tried your recipe today. It was a huge success. My wife is completely shocked I can make this lol. But I had to make some changes to ingredients. I didnt add hing, and instead of dana methi I used ajwain seeds. For squash I used acorn squash, Thank you

    Superb!! I could smell the spices while watching .... the fennel seeds you used must give it a heavenly aroma! I will certainly make this ... but will have to do without mango powder as I do not have it handy ... hope it still turns out good. Thank you Manjula ... appreciate you sharing this recipe! :)

    thanks manjula...the recipe was awesome...however I added very little water as the squash has lot of water content...n did not add sugar...since the squash itself has a bit sweetish taste....thanks once again

    how can you tell if the sqash are cooked? I mean how soft do they have to get?

      squash should be and it mwill be little mushy

      Squash cooks quickly. You can even eat it raw. Depending on the thickness of the pieces and the temperature of the oil, 3-5 minutes is fine.

      My question too, my parents come from north Punjab in Pakistan and all the curries have onion and tomato gravey base there. But I’m going to try this recipe and see how it goes.
