Most, if not all sushi knives are single bevel, so these sharpeners would ruin them anyway. Pull through sharpeners are never going to give you an amazing edge, but the tungsten carbide teeth are just vicious against steel. The diamond/ceramic ones do a better job, but they don't guarantee immediate results. I suppose the carbide teeth creates micro-serrations on the blade, so you'll perceive it as sharp when it bites into a tomato
Im a chef and they got something similar to these sharpeners for work and I tested it on one of my knives. My chefs knife ended up looking like a serrated knife after using it. Absolute shite!

Hey DBK (or i assume Maarten), First of all nice showing how those sharpeners can ruin a knife ^^ The DC4 became a nice little sharpner for me but I've noticed that the diamond side wears out quite quickly while the ceramic is also rough enough to restore an edge that's not totally ruined. I was wondering what you guys opinion is on the CC4?
I've seen this recently at a KnifeCenter video and made me question: Can you actually sharpen a knife with just stropping using finer and finer compounds just as you would do with traditional stones? Not sure if the Idea is video worthy, but hoping someone has input on this
If you do it often enough, yes. Once an edge has been chipped or blunted to the point of needing a brand new angle applied something harder than leather is necessary to create a burr. Convex edges do much better with strops than V grinds.
My wise old wood carving teacher once told me "anything that can dull blade can sharpen a blade". Obviously, the correct tool for the job is best but I've used the bottom of coffee mugs and the edge of a car window and several other things to roughly sharpen a dull knife in a pinch. But honestly a simple pocket stone like the dc4 is cheap, lightweight, and small enough that it just makes sense to have and will do a MUCH better job.

You guys should try the lansky turnbox. It's a real game changer and the only sharpener I currently use, even though I've got like 7 others including custom made sharpening systems. It's small, cheap, the assembly takes like 10 seconds and works like a charm.

A chef taught me that way of chopping onions. I use a Victorinox utility knife daily for 90% of cutting in the kitchen, with honing on a ceramic rod I hardly ever need to take it back to my waterstones, so much better than any of these gadgets for sharpening.
I've got a Wusthof fine ceramic rod and I find it close to useless. Regular stropping on green Veritas compound keeps a mirror polish on my kitchen knives.
First thing me daughter in law noticed when she met me. "Your arm is bald, just like my daddy's" she says. And she and I have been buddies ever since. Twenty years later, I still don't have any hair on my left arm, checked an edge on it yesterday. Lol
Good videoe guys. Look it draws people in who have little experience or who are scared of ruining their edge. Thing is sharpening is a learned skill. I basically use a similar Dimond stone for beat up edges but prefer ceramic rods, then move to a strop with compound. Lansky makes a duel rod system to help with your angles of 20 and 25 degrees. It comes with medium and fine grit. Those and a strop if you maintain the edge after 2 or more hours of use and you will never have to mess with the whole stones and reprofiling your edge. Use just the fine rods then the strop. The medium rods AR for more serious rolls and edge chips.
At the guy who sharpens shears for hair stylists I've always known pull through sharpeners were bad but I did not realize they were that bad I wouldn't mind using it parts of that video to show customers what the difference actually is between a proper sharpening and a pull through sharpener
The pull through thing was clearly invented to be a quick easy way to get your knife reasonable sharp to cut some random stuff in the kitchen with 0 knowledge of edge geometry and, 0 skill, 0 attention. I have no problem with that as long as the marketing isn't a complete lie. I wish these scammy marketing techniques would be legally punished tbh.
My flatmate has a similar thing, she doesn't let me sharpen her knives because she's scared of them being moderately sharp, but her thing makes them actually scary-dull!

I have invested hundreds of dollars in sharpening systems.....I own Japanese Wet Stones, 400, 1000, 3000, DC 4, Ken Onion Sharpener, but the one I have the best success with is the Edge Pro Apex 4. It is not perfect because you have to hold the blade still but with practice you can get razor sharp quality in minutes.
ESEE 6 - 1095 steel. Easily sharpened with stones and a strop. You can get waterstones with 1000 grit one one side and 3000 on the other - more than suitable for general edge maintenance. Only need to go lower if you damage the edge. A strop with a fine or super fine compound with get the edge smooth and lift the performance. Don't' need stones all the time - a touch up with a strop will usually get 1095 back to sharp. Note that DBK have knife sharpening vids in their archives so have a look. ESEE 6 is a great knife and I hope you enjoy using it.
Unexpected knife fail of 2022 Bark River Machete 1v. 10 swings in blade destroyed. Dented up in multiple places. We just had to laugh because I've never seen anything like it. Lottery lemon and of course they are taking care of it so all good. While it's away decided to try out a Trakker. Unexpected favorite knife of 2022 so far...Bark River Trakker. This thing is amazing. First time with A2 and it's amazing (for the purpose of Trakker). Don't get me wrong it's been a challenge and a lot field work learning how to use the knife given it's size and design but WOW.
Tip for you Maarten, if you're gonna cut the onion in half anyway, just do it, and then peel it, much faster and easier. I agree with the hidden message.
Cut the top off, then cut it in half length ways - through the root. Peel it. The root will hold it together whilst you dice it by cutting vertically and horizontally......discard the root. Et voila

Yes and a billion passes will make it a billion times sharper so you can finally split an atom. You don't really have to test it to figure out it doesn't scale like that 😂
Thanks for showing a close-up of the edge after using that first sharpener...it allows me to see that it wasn't being used correctly. Too much pressure was applied, which caused the sharpener to dig into the edge repeatedly, which is not what you want. I'm not saying that it's easy to operate, but there is a right way and at least one wrong way to use it. It's not an ideal sharpener design, because it can take off more metal than is necessary, and requires too much skill to get good results. It also works better for some knives than others.
Yay DBK Thursday. Non knife people buy rubbish knives and don't sharpen them. The cause of soooo many Emergency room visits and stitches. Even chefs don't sharpen knives properly, although to be fair - 99.9% of chefs don't have time - its very hard work being a chef.
Carbide draws are fine for softer tool steel like a lawnmower blade or even a cheap axe head...I guess if your kitchen knife skills are the equivalent of chopping trees or cutting grass they're fine there too.
I watch this video knowing this type of sharpener was my first knife sharpening experience. Funny enough I just got my first "big boy" stone today. A nice DMT double sided stone.
Now, this one was a good video. All those sharpeners are the same and the real value is around $10usd MAXIMUM and you can often get them on sale at most retailers.

I mean even if i wasn't into knives and sharpening, the single sentence that something was "too sharp for the general public" immediately makes clear that whoever made that advertizement is untrustworthy/dubious/suspect and tries to scam people. I agree with most of this. The only thing I'd say is that generally speaking even on more expensive knives I'd rather a person use a cheap pull through sharpener and a strop than just not sharpen their knives. Like if you want to go further by all means do and I think it's worth it in terms of financial cost to get better sharpeners but if you don't care and don't want to spend the time getting good and you don't want to get them sharpened by someone else they're still better than just having expensive dull knives sitting around as paperweights.
But it's a waste in the first place to buy an expensive knife and use a pos sharpener. Everything that makes the knife expensive is wasted. And on top of that, paying 40 euros for the pos sharpener that's worth 10 is another waste. And paying that lying company is also a small tragedy.
@@mrkiky Not really. Why is a knife expensive? Well finished, good materials, good warranty, good construction, good heat treat. A pull through sharpener will make the blade finish pretty ugly I agree and it won't do a great job of getting the knife super sharp although with a strop after using it I'd say it gets a serviceable edge on a knife and the video would support that assumption. So it "wastes" only one element of high end knives, the heat treat the handle finish and overall construction the warranty all that is unaffected. The high end steel is still going to hold the serviceable edge longer than say 420 steel. Sure at the end of the day you can ask, why would you buy nice knives if you aren't going to take care of them? But the fact is people do that. There are people who just won't sharpen their knives with a stone because it takes too long, is too involved, or is too complicated, or it scares them whatever. Pull through is still better than just having dull knives. That said I agree this company with their false advertising is not one I'd support but there are plenty of people making pull through sharpeners who don't claim they're god's gift.

It will continue to hold an edge longer and be tougher than a cheap knife whether or not you sharpen it with a pull through or a higher end sharpening option.

These sharpeners can do a reasonable edge if you know what you doing. There are many ways to skin a cat. I can sharpen a knife to shave with most sharpening tools and methods, including these cheap sharpeners. Most people I know can ruin any knife with any sharpening tool.
SCAM! Agree.... They can put a edge on a junk knife, but never sharp.... Once the edge is fully shaped by that scam sharpener, they get a little better,,,, but not much... I had one for years now and i use it for certain things... but not when i want sharp knives

I thought that everyone watching DBK already knew these sharpeners were for people that buy cheap kitchen knives and put them in the dishwasher with the forks and spoons and have no clue this duls your knives. Did you guys also see the advertisement of a 10$ fantasy knife telling it is one of the secret, hard to get, sushi chef knives and now limited available to get this piece of crap for a rip off price?
A million years ago back in the 1970's and 80's every kitchen had a counter top can opener and they all had a knife sharpener built into the back. They sounded horrible and would eat the blade but after a quick stroke on the steel they were sharp. But TERRIBLE on the blade .
What makes these sharpeners bad is the horizontal grind lines, and the guaranteed thick bur. Sawing becomes a lot less effective with horizontal grind lines. Push cutting becomes a lot less effective with a big bur. But these products do have a target market that will appreciate them, I mean don't bring these products near me "I HAVE A SHOTGUN!" .
I use a small pull-through sharpener in my deployment bag for emergency (and I repeat - emergency) sharpening where it's just not possible to carry a proper sharpening system. Can get a blade reasonably sharp and with care minimum damage that can be fixed later. However, to use these systems as your regular sharpening system is just crazy!! Don't sharpen well and with constant use will ruin (and I repeat - ruin) your edge. Also these knives are useless against premium steels. Use stones & strops.
Theres better carry with you sharpeners for emergencies now days and a lot more smaller to keep in your pocket like the Fallkniven DC4. I used the dc4 on cruwear steel and able to rough sharpen it in 3 minutes easy.
to do the onion trick cut off the root side but leave the other onion side intact. that will give you a little piece to hang onto and hold the onion together after making the vertical and horizontal cuts. (from a former chef). it makes it much easier to perform the technique.

Depends how bad you let your edge get but if you don’t let your edge get too bad you can use gritty compounds to a similar effect of the stones fs.

The root will hold it together whilst you dice it by cutting vertically and horizontally......discard the root.

Yes and a billion passes will make it a billion times sharper so you can finally split an atom. You don't really have to test it to figure out it doesn't scale like that 😂

Automatic and pull through sharpeners are always a bad idea
Thanks for showing a close-up of the edge after using that first sharpener...it allows me to see that it wasn't being used correctly. Too much pressure was applied, which caused the sharpener to dig into the edge repeatedly, which is not what you want. I'm not saying that it's easy to operate, but there is a right way and at least one wrong way to use it. It's not an ideal sharpener design, because it can take off more metal than is necessary, and requires too much skill to get good results. It also works better for some knives than others.

Even chefs don't sharpen knives properly, although to be fair - 99.9% of chefs don't have time - its very hard work being a chef.
I have never met a chef who even understood how to use a steel or polishing steel correctly never mind how to sharpen a knife.
My favorite sharpener is the KME Assisted sharpener. It’s more expensive but very good if you are not into using sharpening stones.
the KME uses actual sharpening stones produced at the right size for it. Not ceramic/tungsten rods or wheels like that internet crap they used.
I bought one of those a long time ago and kept wondering why my edge seemed duller and duller lol.

Carbide draws are fine for softer tool steel like a lawnmower blade or even a cheap axe head...I guess if your kitchen knife skills are the equivalent of chopping trees or cutting grass they're fine there too.

I watch this video knowing this type of sharpener was my first knife sharpening experience. Funny enough I just got my first "big boy" stone today. A nice DMT double sided stone.
Now, this one was a good video. All those sharpeners are the same and the real value is around $10usd MAXIMUM and you can often get them on sale at most retailers.

Isn't it sad that there are people out there, who's common sense does not ring an alarm when the see that "advertizing video"? I mean even if i wasn't into knives and sharpening, the single sentence that something was "too sharp for the general public" immediately makes clear that whoever made that advertizement is untrustworthy/dubious/suspect and tries to scam people.

I agree with most of this. The only thing I'd say is that generally speaking even on more expensive knives I'd rather a person use a cheap pull through sharpener and a strop than just not sharpen their knives. Like if you want to go further by all means do and I think it's worth it in terms of financial cost to get better sharpeners but if you don't care and don't want to spend the time getting good and you don't want to get them sharpened by someone else they're still better than just having expensive dull knives sitting around as paperweights.
But it's a waste in the first place to buy an expensive knife and use a pos sharpener. Everything that makes the knife expensive is wasted. And on top of that, paying 40 euros for the pos sharpener that's worth 10 is another waste. And paying that lying company is also a small tragedy.
@@mrkiky Not really. Why is a knife expensive? Well finished, good materials, good warranty, good construction, good heat treat. A pull through sharpener will make the blade finish pretty ugly I agree and it won't do a great job of getting the knife super sharp although with a strop after using it I'd say it gets a serviceable edge on a knife and the video would support that assumption. So it "wastes" only one element of high end knives, the heat treat the handle finish and overall construction the warranty all that is unaffected. The high end steel is still going to hold the serviceable edge longer than say 420 steel.
Sure at the end of the day you can ask, why would you buy nice knives if you aren't going to take care of them? But the fact is people do that. There are people who just won't sharpen their knives with a stone because it takes too long, is too involved, or is too complicated, or it scares them whatever. Pull through is still better than just having dull knives. That said I agree this company with their false advertising is not one I'd support but there are plenty of people making pull through sharpeners who don't claim they're god's gift.
@@gnomersy1087 Ok fine it only wastes the practical aspect of an expensive knife. Still better to use a cheap knife with a cheap sharpener for the basic everyday task here and there.
@@mrkiky Except it doesn't do that either the practical aspect of an expensive knife is pretty much about how long will it hold an edge, and how tough is it. It will continue to hold an edge longer and be tougher than a cheap knife whether or not you sharpen it with a pull through or a higher end sharpening option.
@@gnomersy1087 But being a better material, it can take a better edge reliably and hold it for a decent amount of time, but you're not gonna put a better edge on it with a crappy sharpener. But fair point, it will hold a crappy edge longer than an inferior material anyway.

These sharpeners can do a reasonable edge if you know what you doing. There are many ways to skin a cat. I can sharpen a knife to shave with most sharpening tools and methods, including these cheap sharpeners. Most people I know can ruin any knife with any sharpening tool.
SCAM! Agree.... They can put a edge on a junk knife, but never sharp.... Once the edge is fully shaped by that scam sharpener, they get a little better,,,, but not much... I had one for years now and i use it for certain things... but not when i want sharp knives

I thought that everyone watching DBK already knew these sharpeners were for people that buy cheap kitchen knives and put them in the dishwasher with the forks and spoons and have no clue this duls your knives. Did you guys also see the advertisement of a 10$ fantasy knife telling it is one of the secret, hard to get, sushi chef knives and now limited available to get this piece of crap for a rip off price?

these kind of sharpeners are awesome,... to mess up the blade...
A million years ago back in the 1970's and 80's every kitchen had a counter top can opener and they all had a knife sharpener built into the back. They sounded horrible and would eat the blade but after a quick stroke on the steel they were sharp. But TERRIBLE on the blade .
Just reading this made me hear that sounds and now I can't unhear it...
Remember these sharpeners well. You could often see the metal shavings that the sharpener had removed from the blade. 😱

What makes these sharpeners bad is the horizontal grind lines, and the guaranteed thick bur.
Sawing becomes a lot less effective with horizontal grind lines.
Push cutting becomes a lot less effective with a big bur.
But these products do have a target market that will appreciate them, I mean don't bring these products near me "I HAVE A SHOTGUN!" .
Yea they do have a target, but they should be priced what they're worth and spare all the lying to their customers.

I use a small pull-through sharpener in my deployment bag for emergency (and I repeat - emergency) sharpening where it's just not possible to carry a proper sharpening system. Can get a blade reasonably sharp and with care minimum damage that can be fixed later. However, to use these systems as your regular sharpening system is just crazy!! Don't sharpen well and with constant use will ruin (and I repeat - ruin) your edge. Also these knives are useless against premium steels. Use stones & strops.
Theres better carry with you sharpeners for emergencies now days and a lot more smaller to keep in your pocket like the Fallkniven DC4. I used the dc4 on cruwear steel and able to rough sharpen it in 3 minutes easy.

to do the onion trick cut off the root side but leave the other onion side intact. that will give you a little piece to hang onto and hold the onion together after making the vertical and horizontal cuts. (from a former chef). it makes it much easier to perform the technique.
