    This lemon bar has a wonderful sweet yet tangy lemon filling. It has a bottom and top crust that's made with a mixture containing rolled oats, dried coconut, walnuts, all binded together with melted butter. Irresistible.

    Hi Stephanie. I made these bars and the appreciation was huge. The perfect balance of sweetness and tartness came through very well. My frig was raided, and my son kept justifying it saying 'no one can eat just one'. Thank you for this lovely recipe!

      Wanted to comment the exact same thing, plus the little tips like if using salted butter, no need for added salt (salted butter is the norm where I live), thank you so much!

    I made this yesterday and it turned out great. I used two lemons for 1/2 cup lemon juice. I think it was just a bit too sour for me although I love the lemon flavour in baked goods. maybe next time I will use less than 1/2 cup juice. Thanks Stephanie for the wonderful recipe.

    It's delicious , I made it but instead of condensed milke I used Recota cheese with 1/2 cup lemon juice and1/4 cup of Honey.Thank u for the recipe👍

      How does this turn out with the ricotta cheese? I'd like to try one version with the sweetened condensed milk, and another with the ricotta cheese. I wanted to double the recipe, but I like the idea of making this with a different filling. Especially as I have some ricotta cheese I'm not sure what to do with.

    Yum! I love the ingredients for the base and I haven't seen a recipe for lemon filling that uses sweetened condensed milk before, I bet it's good. Does it have the same flavour as a lemon curd or is much more sweet and creamy as I imagine.

      +DCARA06 Yes, the filling is a little more sweet and creamy. The lemon flavor is not quite as sharp.

    I love to watch Stephanie, she does a great job of demonstrating the food prep. I made these bars, but found they were dry and crumbly the first day. She suggests they are better the second or third day. I found that to be true. I probably won't make them again. Even though they were better a few days after baking, they aren't really yummy, just ok.

    Great recipe! Although I did alter a bit for health purposes. For example I substituted butter for coconut oil and all-purpose flour for almond flour. Very delicious! Thank you!

      I would do the same but also sub the brown sugar for coconut sugar. I had seen how to make condensed milk with almond milk online. Must find it and give it a try with all the substitute.

    Awesome idea! I made lemon bars a while but they were too rich, I think with the oats/nuts, it will be a lot more balanced!

    When making bar cookies I never know if one should pre-bake the bottom crust for 10-12 m before finishing with the filling and topping or just put the entire thing at once into the oven. Do you have any tip on this??? - Thank you!

    Did these today and followed exactly the recipe and quantities. My square pan was a bit smaller (9 inch) but I found them to be a bit crumbly more than I would expect. Anyway... just popped them in the fridge and see how they look like tomorrow. I liked them but next time I might take out some of the nuts or coconut or add a bit more butter or may be a small egg white to prevent them from falling appart so easily.

    An excellent and very nice variation... with more nutrients, it will easily substitute a cereal bar!
    May work with normal 'granola'.

    I made this for a pot luck lunch at the office and received rave reviews.... so much so that I've been asked to bake them for a baby shower that is coming up. Here in Canada, Eagle Brand milk now is in a much smaller can only 300 grams. I didn't adjust the recipe however, I think it would be better to use some for another tin. What do you think?

      +originalub You could adjust the recipe slightly. Maybe use 1/3 cup of lemon juice instead of 1/2 cup that is called for in the recipe.
