Naomi Judd's Chicken Continental
We lost Naomi last week. It's hard to believe that she is gone, but her memory and music will live on endlessly. As y'all know, I love love love Country Music. Real country music that is. And Miss Naomi was just that. So in honor of her memory, I wanted to do a recipe of hers. Like so many southern recipes, it is so simple and so delicious with very few ingredients. Let me know what you think about this version and y'all enjoy.

Ingredients:
6 boneless, skinless chicken breasts
1/2 stick butter
2 cups rice cooked (white, yellow or brown)
3 cans cream of chicken soup
3 tablespoons dried celery leaves
2 teaspoons dried thyme
1 teaspoon garlic powder (I added this to her recipe)
Cook the rice according to package directions.
Sauté and brown the chicken breasts in the butter over medium high heat to just brown.
Remove from pan and cover to keep warm.
Add the creamed soup to the same pan and bring to a low boil.
Stir in the spices and mix well.
Add the cooked rice to the soup mixture and mix well to combine.
Nestle the chicken breasts back into the rice mixture and cover with lid or foil.
Bake in a 350°F oven for 30 minutes. (internal temp of chicken should be at least 165)
Uncover and bake an additional 10 minutes.
Let rest 10 minutes before cutting/serving.
*You can place all of this in a 9x13 pan to bake if you don't have an oven safe pan.

Beautiful tribute to Naomi, Greg. And so kind of you to post the hotline for help. I hope & pray if anyone feels suicidal, they call for help. As you said, no one would have thought Robin Williams would have done that either. God bless you & praying for the families of suicide. ❤️I loved listening to the Judd's as well . Grew up with them.
Thank you for posting the Help Line. It matters not what country (I'm Canada) mental health issues are everywhere and getting worse as its losing its stigma and people everywhere have a member of friend who suffers with it, often in silence.

I read her book and everything she went through - she was in pain for most of her life. It was inspiring how strong she was. She fought to just live. Love this recipe! It’s one of my favorites. And Wynonna’s! 😂

She was so brave as she fought depression so severe that no meds or therapies could touch it. Her suffering was beyond anything I can imagine. Breaks my heart to see pictures of her. In every one, her beautiful smile didn't reach her eyes. There was always a sadness in them. Your video was a lovely tribute to her.
I lost my mom the same way. She struggled all of her life, then had a disabling heart attack. It was finally too much for her. It's weird, we lost a classmate this way who had young kids and we were all so mad at him. With my mom though, I'm just sad. I now understand why his wife never seemed angry. It's a weird experience and range of emotions. Thank you for putting the hotline on the video. I share it as often as possible and tell people that the world really is worse off without them and to try and hang on for 1 more second, then 60 seconds, then 5 minutes, etc.

We have lost so many who made up a family of great country singers..

OMG I knew she had passed away but no clue it was that way. So true, you don't realize sometimes what a person is going through mentally. My husband LOVES The Judds. He just asking that if they came through our area on the newly announced tour if we could go. I'm not a country music fan but have much respect for the artists. So sad. That looks amazing.

Beautiful tribute, Greg! I grew up seeing the Judd's as role models, being they're from Kentucky as well. However, so many unanswered questions. Usually when they report on a "suicide" they'll state by what means. A drug overdose? Did she shoot herself? Did she hang herself? Why the secretary? Thank you for posting the suicide prevention lifeline. Praying for her family. 🙏🕊️✝️
