If you ever consider checking out the BigFinish audio stories, you may want to listen to "Quinnis". It describes the adventure that Susan mentions in Edge of Destruction, and goes some way to filing in the gaps in the sequence of events between the Doctor stealing tte Tardis,and he and Susan ending up at Coal Hill School.
Regarding the one heart thing there were really silly fan theories that apparently a Time Lord grows a second heart after their first regeneration which is crap of course because in reality Time Lords, regeneration, two hearts, gallifrey none of that was invented yet the Doctor was just a mysterious old man in a telephone box the Classic Doctors aren't as open or as humanising as they would make them in NuWho. The next story was "Marco Polo" which is a 7 part serial which is sadly missing but speaking of fan favourites my suggestion because those were the first i was introduce to Dr. Who too my favourites and popular stories i would recommend are: 1. The Talons of Weng-Chiang. 2. Pyramids of Mars (but i just remembered you already seen that) 3. The E-Space Trilogy. 4. Planet of the Spiders

Obviously it depends on how many you want to watch for each doctor, bearing in mind different doctors have different lengths runs. But I'd definitely recommend using this list as a starting point!
I have created a list based based on ratings in three mediums - the IMDb, the GallifreyBase Forum and official Doctor Who Magazine. I will post it in replies to this comment, as I want to make some annotations first. (Check "Newest comments" if they're not showing up.) Without stating where one Doctor ends and the next starts, the moon emojis reflect the respective serials performance compared to the other serials of the same Doctor. A full moon means it is in the top 20%, a new moon places it in the bottom 20%. (I've tried other emojis but always ran into some problem, I hope these work for you.) The results do look very similar, so they will largely reflect a majority opinion, but I do want to point out that we are all different and you are bound to disagree with concensus somewhere, watch stuff you don't enjoy and miss out on some you would have. Edge of Destruction for instance does not look to convincing and I for one really like the opening serial of Season 2 (🌘🌘🌑), which is quite an unusual one.
