There are no supermarkets in Oia, only minimarkets (much smaller, and more expensive). The minimarket I recommend is PROTON just next to the bus terminal.
Tap water in Santorini is either brackish water (= semi-salty water => disgusting) or desalinated sea water, which is also demineralized during the process => wont rehydrate you properly. Every island is different, but as a general rule : islands = bottled water only.
