  • This no-churn blackberry ice cream is one of my all-time favorite ways to enjoy fresh blackberries in season. The texture is absolutely perfect, and your guests will have no idea you didn’t use a machine. The secret is the fresh blackberries we smash in at the end, which takes this from great to mind-blowing. Enjoy!

      I’ve had good luck gently heating the cream and dissolving in chocolate drink mix (Ovaltine in my case, but I bet Mexican tablet-style would work too.) Maybe you could even melt a whole dark chocolate bar in. Then, I cool it to fridge temp and whip from there.

    • @JesseRabenhorst
      @JesseRabenhorst 10 หลายเดือนก่อน

      I imagine using regular chocolate syrup (or, Chef John has a recipe for that too) and sweetened condensed milk would work. It would probably just come down to the ratio of chocolate mixture to the whipped cream to make sure it combines correctly. Maybe mix in some mini marshmallows and chopped almonds. But I’m getting ahead of myself…

      You take whole milk and sweetener alternative of your choice and simmer it until it's reduced by half. Cool it down in the refrigerator for 24 hours before using. I just found the recipe for making sweetened condensed milk and subbed out the sugar for the sweetener alternative. The same with Chef John's recipe. I will say that using anything with erithotyl in it does alter the texture of the ice cream. So if you can find allulose or something without erithotyl then it will probably turn out better. If not, then it's not bad, just a different mouth feel

    decades ago, I worked, very briefly, at a French restaurant in Americus, Georgia (it was the late '70s, Carter was President and Plains, Ga. was 15 miles away). The chef\owner (who did nothing to change the stereotype of temperamental prima donna chefs - knife throwing included) made a dessert "crepes princess"- a crepe with vanilla icecream, strawberry and whipped cream. I bet this blackberry ice cream would make an even better dessert.😊

    Smashing unfrozen fruit into the ice cream is indeed the way to go, for both texture and flavor. I've made strawberry ice cream with slices of strawberries frozen along with it, and not only do you need to defrost the fruit chunks in your mouth to actually taste them, they are no fun swirling around in there. With blackberries you'll only get annoyed, but with strawberries or mango you might be giving the roof of your mouth some unwanted ventilation.
