So I bought some “cactus honey” here in Phoenix and it was 3lbs of solidified agave nectar. I thought it was honey but quickly realized it’s not. 2 weeks into fermenting and it smells amazing.
i wanted to do an agave acerglyn with tequilla staves, and was ready about agave "milk" which as far as i can tell is closer to agave sap than syrup, so its not so super full of fructose. id be really interested to see how this goes because if agave syrup works decent that would be so much easier, but it just seems like such a harsh thing to ferment it freaks me out lol
We will see what happens! Someone on Reddit pointed out that I'll probably want to add some tannin to help round out the flavor, and I think that's right.
