I don't think it's jam actually, I think it's this gel like substance that helps to preserve the appearance of the strawberries and give it a glossy finish. I dunno, maybe I'm wrong in this particular case. But I've seen tonnes of bakeries use this technique.

Vlad Carlsson I just make a small allowance for sweets in my diet. So long as you compensate with the rest of what you eat that day, and only eat small amounts, you don't have to wait months. I hope you get some cheesecake.

Vlad Carlsson One of the best ways to keep craving under control is to make a diet that you don't "cheat" on. Basically just calculate your treat as part of your daily calories, and boom. No cheating.
If you plan it right, you can have something like a small (like 200 to 300 cal) slice of cheesecake every week or so and still lose/maintain weight. The key is to plan for it ahead of time, and to have the control to avoid going "Just a little bit more." It's a great way to get rid of guilt and cravings, but it does require control.
If you have the ability to, it helps to see a nutritionist to figure out your metabolism. If you know the number of calories you need each day for sure, you can work around that. It also takes the guilt away when you know for sure you're not going over, and that you aren't overdoing the unhealthy food.
Sorry, about the unsolicited advice. I just used to have a lot of problems with food cravings when I tried to stick to diets and followed the denial mentality. Now that I've figured out ways to incorporate the foods I crave in a healthy way, I actually end up eating healthier than I used to. I remember the salad days, and hope to spare anyone from thinking that they can't ever have the foods they like, or feeling guilty when they do.
Nobody should have to forgo the foods that taste the best. Not when there are alternatives that mean cheesecake for all in healthy way.
I think what Aiden says is true. I don't believe in dieting in the sense of not eating 'bad' food: it's more like moderating what you eat. I know that if I cannot eat certain types of food, I will think of nothing else. So I allow myself some so that I don't go crazy and then binge on something that is high calorie or has lots of fat.

As a foreigner who’s been to New York once, I have to say this is one of the few things I envy the Americans for.

Blue Exile Ingredient quality does change over time. It's possible it's your grandparents, though. Sweet foods taste the best when we're kids. As humans start to get elderly, there are certain flavors that aren't able to appreciated as much.
Then again, a lot of food used to be better even just 10 years ago, so it's quite possible the quality has gone down.

I've made many cheesecakes by hand and tried many cheesecakes made by masters and amateurs alike. This one looks like it's just manufactured with no heart just numbers...yet in spite of myself, I've tried Junior's twice. And those two times are the two best cheesecake experiences of my life. No fluke. Whatever they're doing wrong...they're somehow doing right.
