Most people have never had real, fresh honey!
I gave this last batch away in small batches and my father accused me of being like a “drug dealer”. Give him a little sample of creamed honey for free so he comes back for more! Have you tried using your creamed honey to seed a larger batch? It’s in my list to try next.

Question. I’ve used your method with no seed honey. First question, I know not to turn up the mixer at the start but after it gets going what speed should the mixer be on? Second question, I’ve beat mine 90 min and I still have a slight grit of crystals in my mouth when I taste test. I keep beating but still have a slight grit. Just don’t know when it’s done??
Heating honey destroys the healthy yeast and enzymes found in it that are good for your body. Creaming honey is an easy way to preserve the health benefits of crystallized honey! This process reminds me of the Sourdough Starter and Kefir I make at home. I am guessing that the yeast and enzymes of Raw honey may 'spread' over into the cheaper cooked honey. Buy a small, cheap 'raw' honey and keep adding large amounts of the cheap 5 pound honey to it and let it sit on the counter with a 'breathing' paper towel and rubber band around the top of the container about 14 days,. You will continually have a 'raw' honey for a much cheaper price. This was super easy to do. I made a 1/2 cup batch in 5 minutes or so with my hand mixer. It is delicious and a money saver compared to the expensive brands at the store!

Any real honey will crystallize over time. Raw honey from your local bee keeper will crystallize a few months faster than pasteurized honey. This is nothing more than the perfect way to use old crystallized honey.
Tip : Warm your Honey Low and Slow !!! (Maybe in a Warming Draw, a very Cool Oven, or over a bowl of Warm Water. Even a warm Laundry Cupboard etc ... Never Cook or Heat it up to much !!! This spoils Honey ! The best way to make Soft Set Honey, UK (Stateside called Creamed Honey !) 🤔 Is to do the following .... Warm the Crystallised Honey, and the Runny Honey to body temp eg 37C (98F) or so. Certainly no higher than in the mid 40Cs, (110Fs,) for a good few Hours. Hot honey breaks down and loses its Aroma, Taste, and is Toxic for Bees ! (Contains HMF !) By blending the two Warmed (liquid Honeys together !) In that Stand Mixer... It will Churn (rather than Whip !) That Honey will be easier on the Motor, or Hand Stirring ! Do this often and a little at a time...for the Smoothest Set. Into what we call here in Scotland "Soft Set Honey". [We can't call it Creamed Honey, in the UK, if you sell it... ] Because folk thing it has "Cream" in it !?! 👀 When do Bees go anywhere near a Cow or a Dairy Farm ? 🤭 Back to the Bees.... 🐝 Just saying... Making my Soft Set Honey, for the Annual Honey Show, that's on next Sunday ! Crossed Fingers that I win a Category re Honey.... Off to find some nice Honey Jars ! 😎 Any. Crystallised (Solid) Honey or what we Call OSR Honey (Nectar from Oil Seed Rape... Is that Canola in USA?) Anyhow... That sets solid like Concrete in the Hive Frames, or Honey Jar when cool ! We are in the start of our autumn so it’s slowing down but next spring I definitely hope to make some. My uncle would always give us a big jar of it. It is my favourite of all time
I understand that, I usually share much more than I sell with neighbors, friends, and family. This year I’m going to focus on setting up a honey stand and finding some other outlets to sell honey though.
No, it will not turn back into the large rough crystal honey as creamed honey is already crystallized honey. It's just that the crystals are now tiny and smooth.

To make Seed or Kurn for churned honey you need some of your own crystallized honey and a stone and mortar

Why does the honey need to be crystallized for it to cream?
Do you sell pure pure pure honey mixed with nothing but just honey from the bee?
