I do agree with your recipe, chef RV. When I make my egg salad sandwich, I add white pepper & a squeeze of calamsi or lemon juice to lessen the umay taste. And to add some spice to the salad, I add a small amount of wasabi powder. To add some freshness, I don't forget to add some thinly sliced spring onions.
