I hoped she was a character too, but im guessing they maybe didn't find any kind of role for her to be in so they didn't animate and add her to the game. However, the fact that this story continues off of a Matter of Loaf and Death may hopefully mean that we could maybe still see her return.
Bernard Grubb explain the reference of Wallace & Gromit: A Matter of Loaf & Death. The reason why he hated and wanted to frame Wallace with his crimes on him, is because the spokeswoman Bake-O Lite and serial killer (his ex-wife) Piella died on the movie before her poodle Fluffles joins Wallace and Gromit. 8:10. That is why she died by the crocodiles. 8:28. 😠.

Wallace is currently voiced by Ben Whitehead who was was Peter Sallis' official back-up voice for the voice of Wallace. Whitehead becomes officially becomes Sallis' full-time successor of the voice of Wallace when Sallis was forced to retired in 2015 and eventually died two years later.

I really do hope this becomes a stop frame animation film with plasticine models just like the short films
