135 degrees Fahrenheit is medium rare
Let the steak rest in the fridge for at least 30 minutes after seasoning
Let the steak rest at least 7 minutes before cutting into it
I didn't do it this time, but you could baste the steak in the pan with butter, thyme, and rosemary. Just make sure to turn down the heat so the butter doesn't burn.
