I make a sauce very similar to this. I mix ketchup, mustard, mayo, chopped up pickled cucumber, lemon juice, vinegar, cayenne pepper, salt and Worcester sauce. I don't measure anything out I just chuck it in there 😂😂. It tastes amazing with burgers, chips and so much more

this is honestly the best burger sauce. I use it everytime i make burgers. Even though i don´t use mostarda. No Burger i´ve ever eaten had a sauce in it which could come anywhere near this one Putting the lettuce(and onions) in the sauce gives it a much better texture and makes it not as runny

+saleh aburashids you can imagine it like a spicy sweet onion sauce with a gentle mustard aroma. to replace it, i'd gently cook some sweet onions (like shallots), maybe some garlic, deglaze with some white wine, maybe even white wine vinegar, add water, salt and sugar. let it sit for a while, let it cool to room temperature and then mix it with some mustard. i haven't really tried this exactly, but it should leave you with something similar.
+saleh aburashids the alcohol content goes away while you cook it. If you still don't want to use it, maybe go for some cooking wine? I think it doesn't have any alcohol
while it still has some alcohol, most of it is lost in the cooking process. cooking alcohol is just cheap wine since you won't taste what kinda wine you used to deglaze. you use wine for the gentle sourness it provides, that's why i sometimes use vinegar mixed with some water. white wine vinegar is one of my favourite vinegars and it doesn't have any alcohol in it since it's lost in the procedure to make it vinegar. i tested using lemon juice to deglaze but it burns and tends to lose its sweetness so i'm still figuring that out. deglazing is important because it scrapes off the residues that stick to the pan and that adds a deeper flavor to what you're cooking.
+saleh aburashids Maybe start cooking some balsamic vinegar with onions, then when it start to caramelize adds either [water+lemon juice] or [vinegar], bit of chilly and a pinch of salt. Cook it until you judge it good enough and that should work fine and will be free from the taste of alcohol

+Dimitris Plastourgos You can make something similar by dicing up dried figs, apricots, cherries, apple and a pear (whichever fruits you fancy). Boil some dry red wine and honey until syrupy and then stir in mustard and mustard seeds. Pour over your fruit and allow to steep for 24 hours. Jar and refrigerate to be used in your burger sauce or on its own!
That its 2 unrelated things, like saying if you dont have a knife you can cut it with a piece of bread. The taste has nothing to do, and also the texture. So, if fot you, anchovies and olive oil taste like mustard, congrats, you dont need any recipee.

The question of whether can anchovy fillets be added in was merely a question being raised, rather than having it being brought down to political judgement as a whole. Its just a sauce dude, lighten up.

When you say substitute, What do you mean? You can't get it and want something similar? Or you don't like it and want something else to replace it?
