This is the best pancake I have eaten with NO yeast, NO salt, NO oven. Simple recipe with only 3 ingredients, purple sweet potatoes, all-purpose flour, and oil. Similar to Tortillas made by purple sweet potatoes, or called purple yam. It comes out so soft and moist and you can keep it in a few days.
