The reason canned pumpkin is more orange is two fold; 1) you used a squash, not technically a small cooking pumpkin, flesh is a different color, 2) canned prior has oxidation which darkens it, anyone who cans can tell you that in the canning process, apples, applesauce, peaches, etc are a darker color once canned.
@DF9392 in fairness, I think most people are so removed from where food comes from, they genuinely don’t recognize reality. For example, distinguishing between squash and pumpkin, knowing what constitutes a good cooking pumpkin, what preserved food looks like without chemical preservatives. I’ve had people ask why my canned applesauce is so brown and I have to explain that commercial apple sauce uses considerable preservatives to achieve that pale color. No preservatives are needed for applesauce, in an emergency situation, 3 year old jarred applesauce is still good, as long as no air has entered the jar. I actually had a Brazilian coworker, when I was posted to Brazil not understand why I as too lazy to make pumpkin in America when I was cooking for just myself. I told him I didn’t want to do all the labor of cutting up and cleaning a pumpkin if it was just me. He said, just buy already cut up pumpkin, I had to explain that while pre cut pumpkin as plentiful in Brazil, in America, you get a pumpkin whole and have to cut it up yourself.

I just used baked squash or pie pumpkins. But half way through baking turn them right side up to help remove the extra moisture. Run baked squash through a ricer or puree in a food processor. For every 2 cups of pumpkin puree you get add one egg or 2 egg yolks and about 1/2 cup to 2/3 cup flour with salt and pepper to taste to make the gnocchi dough. The flour should make a stiff dough but not too stiff. Just enough to hold together. This is where it's hard to use measurement because it's a how it feels type thing. I've always had a bit of water boiling as I make the dough and drop smaller gnocchi as im mixing into the water to test for the texture. Too much flour make them hard and rubbery. I've also added a half cup of finely shredded parmesan cheese to my pumpkin and flour too. It's very lovely in a gnocchi. Once you've made them a few times you get a feel for how much flour they need
@SteviiLove you can say that again! I made this on Halloween and it really lacks the potatoes binding structure. I even steamed the pumpkin so it wouldn't absorb too much water, but ended up having to put in at least 2 cups of flour when kneading (not typical of a gnocchi recipe) just to make them not sticky enough to mold... then they were extremely solid once cooked! Cute but more of an aesthetic then realistic food.
The orange comes from them grinding the rind - it's soft and edible ... but HAS TO BE FULLY COOKED & SOFT! Also: slather olive oil on the rind & sprinkle with salt, flesh side down on the pan - the olive oil helps soften & the salt forces a tenderizing effect - like reverse osmosis. Bigger pumpkins typically called Jack-O-Lanterns cook up beautifully & can provide 10-15 CUPS of pumpkin for freezing + delish stirred into Chili for extra nutrition!! 🎃

If incorporating into meals, back off on fully roasting so when u pull it out of the freezer & add to a meal u can continue to cook them. Enjoy! 🎃❤️🙋♀️

I do both Turkey & Beef Chili (1 lb of either, depend on price), 1 big Vidalia chopped, 1 Sweet Pepper chopped, add 2 Cans Mild Chili Beans with the sauce, then 1/4-1/2C Pumpkin, sometimes 1 Can sweet Baked Beans to give the chili a balance from too hot if kids are eating & dump any left over salsa in my pot too. Really the cans of chili beans make the soup - if I don't have Sweet Baked beans on hand, I might add some sugar to offset the spice from the chili beans. I like Cilantro too so try to add, but not if kids eat it - many don't like it, think it "tastes soapy." I just keep it simple + hope u enjoy it too!? Maybe it's a good thing grocery stores don't know Jack-O-Lanterns are edible + they might raise the price exponentially!? 🤭🤣🎃❤️🙋♀️
