So yes I would have to say that he knows something is lacking and uses gold leaf as a gimmick to fool the tourist. If someone served me a plate with gold leaf I would immediately send it back, if I ever saw gold leaf advertised on a cuisine chart I would immediately walk out. I'm not paying upwards of 500-1000 USD for a subpar meal masked with gold leaf gimmicks.

As an Alaskan, we used to eat king crab like every holiday. Prices skyrocketed lately, they had to shut down fishing cause of populations and I don’t think the price will ever get close to where it was. I was blessed to work on a cargo ship that interacted with crab boats at sea. We'd bring them gear, groceries, and other supplies. We'd take away their frozen bags and boxes of crab to be sold. We sometimes traded with the boat crews so that we could have some fresh crab to eat aboard our ship for dinner. It was so fresh that you wouldn't use anything on it. Even the best melted butter would mar the taste. The fresh catch, lightly steamed, would easily pull from the shells. It tasted almost like sweet candy. That was nearly 30 years ago, and I can still remember the taste. I'm spoiled and too picky to eat the overpriced restaurant stuff now. 😂
Once you eat seafood straight from the sea, you can never go back. The sweetness you describe is unattainable otherwise. Can't be paying restaurant prices for second/third tier seafood.
It looks like an "Enso" which is a circle drawn with a single stroke, it was a zen practice. The red fish eggs are reminiscent of the red ink seals applied to artworks.

He's such an artist. My Dad was a cook as well. Everyone loved his cooking. He was a priest, but loved cooking for all of our family. There are 24 of us nearby. He passed 2 years ago. He acted like the chef here in so many ways. I miss him so much every day.
