Roast Chicken recipe for Weber kettle

  • This is my roast chicken recipe for the charcoal Weber Kettle.
    I'm not sure if I'm the only one who's noticed this, but it seems like there are a lot of chicken videos on TH-cam. It's probably because people are always looking for new ways to cook, or they're trying to find something that tastes good. But what if you already know how to make roasted chicken?
    The perfect roast is in my opinion when the skin becomes crispy and charred in some places, while still keeping the meat moist. You can achieve this by starting with a dry bird and making sure your charcoal grill has been hot enough before adding the meat.
    I will teach you to make the perfect roast chicken. You'll be laughing in no time when I show you how easy it is!
    INGREDIENTS FOR CHICKEN SEASONING:
    2 tbsp of salt flakes
    2 tbsp of lemon pepper
    1 tbsp of dried rosemary
    1 tbsp of dried oregano
    1 tbsp of garlic powder
    1 tbsp of onion powder
    1 tbsp of smoked paprika
    Items Used:
    Butchers Twine
    Roasting Rack
    57cm (22") Weber Kettle
    Double sided JG BBQ offset plate
    Chimney Starter
    Charcoal Baskets
    Thermopen M4 Instant read thermometer
    Hydration:
    3 x beers
    Whether it be grilling, smoking, low n slow, how to videos or just your basics of BBQ, my aim is to help you along your BBQ journey. So make sure you have hit the subscribe and bell buttons, that way you can be reminded every time I upload new videos.
    With 30 years of experience cooking on Weber grills, you are getting my knowledge compacted into small weekly videos. These techniques work and I know this, as it is how I have been cooking on these BBQ’s for three decades.
    There is so much wrong information out there and my aim with all of my videos is to help you Master Your Grill by sharing my knowledge and experience and passing on actual practices that are tried and tested, not just copied.
    If you are interested in working with me or getting some social media videos or photography done, don't hesitate in contacting me. -------------------------------------------------------------------------------------------------------------------------------------------

    I made my first beer can chicken yesterday on my Weber kettle, it turned out excellent, nice and juicy! was a good 4 beer cook, I poured the beer out the can and replaced it with water though! You having that Schuey?!!

    • @SchueysBBQ
      @SchueysBBQ  3 ปีที่แล้ว +1

      Hey mate, glad the chook turned out great. It was juicy because you didn't over cook it though. The fact the you would have only cooked the chicken to a maximum of 74C internally and liquid needs to be heated to 100c before it will start steaming and adding moisture to the cook, that water in the can did nothing for your cook. Cheers for using the beer timer mate.

So far I have tried the lamb cutlets, loin lamb chops, lamb koftas, dim sims, chicken smash burger’s , crispy chicken burger’s and the family and I have enjoyed everyone. • @SchueysBBQ
      @SchueysBBQ  7 หลายเดือนก่อน

      Thanks @freeo7601 yes and no. The temp in the Weber will drop with double the col meat and take longer to come to temp, so get the temp a bit higher than you need it to start with and adjust. The thickness of teh bird is no bigger, so will take no longer in normal cooking temp.

    • @SchueysBBQ

      HaHa the old double granny knot. Mate I love spinning any roast on my rotisserie. I thought being that new they are a $249 bit of kit, I'd show people this set up first. Even beyond this, doing some veggies underneath while the bird is roasting away. I fluctuate between standard roasting like this video, to spinning a whole bird on a rotisserie or using the cage when I spatchcock a chicken. All great methods, I plan to film all version and then ramp up the techniques as well.

    • @SchueysBBQ
      @SchueysBBQ  3 ปีที่แล้ว +1

      Hi Richard Hodgson, pretty much. It is just a pointless myth. Chicken is fully cooked when it's internal temp is at 74c. Liquid needs to be at 100c before it starts to create steam, so no matter what anyone thinks, the facts are it doesn't do anything for the flavour or moisture retention for the chicken. You have effectively just warmed up a beer that you cannot drink. I say drink the beer, while the chicken is cooking 🍻
