    who wants to add eno and soda to food daily. that's disgusting. thank you for this video. kolkata has 97% humidity during summers and even sprouting chana mung is difficult as it gets spoilt by morning. is there a way to ferment without infecting the batter on the heat n humidity

    • @RENUSHRIGADIWAR

      Yes, place hot water vessel near batter and cover both of them with cloth and leave for atleast 5-6 hr

      Yes in south india, we regularly make idli batter without baking soda/eno/curd etc. So that we get the probiotic benefits of fermented foods(naturally) like idli,dhokla etc. North india is highly westernised🤦‍♂️

    • @peachNplum
      @peachNplum 3 ปีที่แล้ว

      hema parmar, its not true that dhokla cannot be soft without eno. Natural fermentation makes a product soft and spongy..
      Traditionally dhoklas and khaman were made by natural fermentation. But now they make it mostly with eno!!
