@@RENUSHRIGADIWAR most wc.... I hate eno or baking soda as it destroys vutamins in dhokala and u get nothing other than besan or whatever udad, rice used sugar or lemon juice....etc
who wants to add eno and soda to food daily. that's disgusting. thank you for this video. kolkata has 97% humidity during summers and even sprouting chana mung is difficult as it gets spoilt by morning. is there a way to ferment without infecting the batter on the heat n humidity
@@RENUSHRIGADIWAR won't it get even more humid that way? It's already 97% humidity here. So hot and humid that anything you soak at night, gets rotten in the morning
Yes in south india, we regularly make idli batter without baking soda/eno/curd etc. So that we get the probiotic benefits of fermented foods(naturally) like idli, dhokla etc. North india is highly westernised🤦♂️
hema parmar, its not true that dhokla cannot be soft without eno. Natural fermentation makes a product soft and spongy.. Traditionally dhoklas and khaman were made by natural fermentation. But now they make it mostly with eno!!
Like other comments, I too was tired of looking for a recipe of fermented dhokla. Finally, found it! You have earned a subscriber💪🏽

This is not a source of probiotics. Probiotics must have live microorganisms. Cooking kills them. दही is probiotic.

Suji ka dhokla without curd, eno, baking soda, powder k fermentation krne ki koi tips batae please
Soak suji in water and then add lemon juice and then steam
@@RENUSHRIGADIWAR how many hours to soak?
@@RENUSHRIGADIWAR thanks 😊 for replying
Hi sis,is it ok to leave the batter outside at a corner to ferment, during this summer?
Yes
Make sure that you should not leave for more than 6 hours
36-42 degree temperature hai jaipur main. Isme 8 hours ke liye rakh sakte hai kya fermentation ke liye
Yes ofcourse
Or else you may ferment for 5-6 hrs
I was looking for without eno, soda, curd because of vegan diet
Can we also make idli out of this batter?
yes
Thank you
🙏
Mam what is the ratio of rice : dal (in gram) will be taken for this process.I not aware about tea spoon and table spoon. Please reply.
rice 35g
all dal 20g
@@RENUSHRIGADIWAR thank you so much.
I tried it. Turned out a bit denser than the regular dhokla which is lighter and fluffy. The taste is awesome though. Where did I go wrong?
Could be fermentation factor...in that case use eno for better results
@@RENUSHRIGADIWAR Thank you :)
I also tried as per your recipe but my dhokla was not soft. Do not know the reason. But batter was well fermented
While mixing the batter pl. don't change the direction
Is it dry dhokla..or we can add water to it
Your choice...if you like wet dhokla then you can add water
@@RENUSHRIGADIWAR if we want spongy so how much curd use in fermenent pls reply and also in winter how many hours fermentation in Gujarat
@RENUSHRIGADIWAR for wet how water to add as u suggested 1/4 cup water
Will this have a sour taste??
no not all
No sugar water required on the top of dhokla?
If you want you can put
I don't like rice in dhokla can i skip pls reply
no this is proper proportions to make dhokla
This is the classic or authentic dhokla recipe. One can use only chana dal with very little rice also in case of khaman recipe..
yes ofcourse
who wants to add eno and soda to food daily. that's disgusting. thank you for this video. kolkata has 97% humidity during summers and even sprouting chana mung is difficult as it gets spoilt by morning. is there a way to ferment without infecting the batter on the heat n humidity
Yes, place hot water vessel near batter and cover both of them with cloth and leave for atleast 5-6 hr
@@RENUSHRIGADIWAR won't it get even more humid that way? It's already 97% humidity here. So hot and humid that anything you soak at night, gets rotten in the morning
But how they will become soft...without eno
Like Idli they are fermented

U dont add curd before fermentation?
If want to add you can, but well fermented batter has sour taste in it...
Curd should not be cooked in heat.
Mera dhokla spongy to bnta h but jb m usme sugar syrup dalti hu tho wo soak ni pata or under se dry rhta h
Dal dhokla will be dry as compared to besan dhokla....just like idli
@@RENUSHRIGADIWAR , but idlis are not dry when made with proper proportion..
B'cos, if it won't dominate the recipe, can I use the same trick to make cake??
no
At what flame level do you steam the dhokla? Low, medium or high flame; for how many minutes?
High flame for 20 min
SNEHAL SHRIGADIWAR thank you! 🙂
No sugar
no
This is called as idli batter not dhokla
My dear, when did idli batter contain moong, chana dals. Idli is made only from par-boiled rice and urad with a little methi seeds.
Thank you😊
Thank you❤❤
