    Ingredients
    ½ cup salted butter, at room temperature
    2 teaspoons dried thyme
    2 teaspoons dried rosemary
    2 teaspoons dried parsley
    2 teaspoons garlic powder
    1 teaspoon cayenne pepper
    salt and ground black pepper to taste
    4 thigh, bone removeds
    1 pound baby potatoes
    2 large onions, roughly chopped
    8 cloves garlic, minced
    1 drizzle olive oil
    1 medium lemon, zested and juiced
    Directions
    1. Preheat the oven to 425 degrees F (220 degrees C).
    2. Combine room temperature butter with thyme, rosemary, parsley, garlic powder, cayenne, salt, and pepper. Set aside.
    3. Pat turkey thighs dry with a paper towel; season with salt and pepper.
    4. Place potatoes, onions, and garlic on a baking sheet, drizzle with olive oil, and season with salt and pepper. Add turkey thighs and rub herb butter over the meat and under the skin. Top with lemon zest and juice.
    5. Bake in the preheated oven for 30 minutes. Continue to bake, basting turkey with its own juices after 15 minutes, until no longer pink in the centers, about 30 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

    This is BRILLIANT!! Thank you so much. I ordered four fresh turkey thighs from Maple Lawn Farms in Maryland today, for pick up the day before Thanksgiving.       I like thigh meat. But at the store I've seen turkey thigh for 8 or 9 dollars for one.
      It's way cheaper to buy a pack of chicken thighs....

    My oven died and since our fave is dark meat I might make this in the toaster oven. It is a pretty big toaster oven so this recipe should work.

    I like to de-bone (skin on) my thighs before roasting. Any tip on how long to roast them when de boned? I remove the bone simply for ease of serving. You recipe looks to be very tasty.

    One recipe on YT needs 19 ingredients for turkey wings. In the UK, we don't have (?) ready-made seasoning. I do keep a well stocked herb selection and I have all I need for this recipe. It has taken me 40 minutes of being shouted at by channels that seem to think that is required. Some require ingredients I have never heard of. I don't know what these people are hoping to achieve but if I put 'simple' in the search bar 19 ingredients is a tad 'orf' as King C would say. I am going to Sub, etc, just because 'you're worth it'.

      Maybe try 1 hour covered at 325F, and then uncover and roast at 425F for another 30min.

    Looks great... but the one thing that kills it for me is the lemon. Just can't get use to lemon flavoured food.

    Try dry brining the thighs in the refrigerator for 24 hours before following the rest of this recipe. You will not be disappointed.
