I actually prefer half prawns instead of whole cuz it's easier to tell if they cleaned the prawn properly (i.e. Removed the intestinal tract which from what I saw in your vid they didn't)
As a peranakan, it is still buah keluak. Some families combine them with shrimp paste, others pork, others with dried sole. There are so many variations
thanks for letting me know! Would you say that there's a preferred version of buah keluak? Also, am I right in saying that the original buah keluak is the one with the nut?
A couple of what I remember: - Ah Heng Curry Noodles (has a wall of pictures taken with celebrities) - Zion Riverside FC's Char Kway Teow (I remember was said to be patronized by both ex-PM Lee) - Tong Fong Fatt Chicken Rice(also patronized by LKY, there's pictures of him in some outlets, but their standard has dropped over the years)
Hey Alderic, nice idea for new series! Anyway I just wanted to say that the buah keluak is not "fake". There are generally 2 ways in which the nut is served: served as is, or scooped out, mixed with meat, and then stuffed back into the shell. There is not right or wrong, and it's more down to personal preferences, or in the case of Peranakan food, how their great-grandmothers and grandmothers have been making it since decades ago. That said, it was weird how yours came out in 1 solid piece. I've not encountered that before. Anyway, looking forward to the rest of your series!
@@Alderic. According that what I know, there are 2 types of buah keluak. For the better one, there's no need to stuff the nut with meat because it is flavourful enough. For my family, we do not stuff it since we use the better ones. We use babi and not ayam too.
Hey Alderic, love Anthony Bourdain and this series already. I think it would be great if you could share the video or article where the original celebrity visited the locations so we can trace that journey as well! Also funny you should say it, but I actually know someone who was JJ Lin's schoolmate.
Sung Si Kyung. Korean celebrity who is known as a foodie has 2 vlogs on his food adventures in sg. KEK Seafood now has a Sung Si Kyung set after his visit.
In America , especially early 2000's era , its undoubtly that Anthony Bourdain pioneering the concept of travel vlog show in America entertaiment scene which at that time travel vlog show still regarded as something new
U came to the Tekka 545 prawn noodles at the right time. I been eating this store for years as my office is nearby. And when their daughter who took over in the beginning, the consistency was not as good as now. Now it is almost very consistent good every time I eat.
yeah, Bourdain actually ate very extensively in Singapore. I had to limit the scope to just "Parts Unknown". Hopefully, we'll have any public figure that visited Sin Huat later in the series.
Please start a prawn noodle series one day😂 i am a BIG fan of dry hae mee (the combination of sambal + shallots oil + lard is like GOAT and for the soup i like the prawn-forward umami type rather than porky based ones)... Your love for mala is probably like my love for prawn noodles. I really can eat it like 3 times a week (if I dont think about the cholesterol 😅) I have a few hidden/underrated gems in my comfort food go to~ maybe i will share if you start the series 😏 And yeah I don't like halved prawns too cuz it lacks the bite/crunchy factor.
That's not kerisik, that's called serondeng. It helps to add more flavour dynamics to the lontong dish. Kerisik is normally added in rendangs to boost the lemak and roasty-toasty coconut taste. Cheers and here's to one day seeing the best nasi padang series. 😊
Actually I dunno if it's cos I've been gaslit so long that I've developed some half-prawn-stockholm-syndrome but I just feel more used to half prawns in my hae mee. Taking a whole prawn in with a spoonful of noodle just seems a bit too much now. Dayum
Nice video. I am glad we finally move on from Mala. Full disclosure, while I am not a fan of 'ma' though I am a fan of 'la.' I noticed that you did not go to Tian Tian for their chicken rice. 😉 I suspect it is because most Singaporeans think Tian Tian is over rated and for tourists only. 😝
Alderic, you can try Mikey chen or mark weins’s reccomendations. They might sometimes glaze the food more than krispy kreme glaze their donuts. But can be a good gateway to international audiences
I too, always advocate for paying more for local food. But 60$ for mini pomfret is too steep for me. Esp in assam sauce, which can mask the taste of a slightly unfresh fish. Id prefer to pay $60 for a teochew style pomfret. To me assam can reserve it for cheaper fish like stingray or batang a t a nasi padang stall. Meat is mostly just a carrier for the sauce here.
Hi Sir, not kerisik, kerisik is an ingredient for cooking. for lontong, or dishes, serunding or serunding kelapa is given as a topping or side dish. u can get serunding with ketupat eaten with rendang during festivities etc.
Hey Alderic, what about one of the OG YT food vlogger Mark Wiens? Specifically this video - th-cam.com/video/_Ttf--3axiY/w-d-xo.htmlsi=fVum70hX8gjOQWkZ
alot of the good hawkers really do felt like they nerfed the dish to fit the price range. What a shame :( i wonder how the same dish will taste if someone pay them to go ham and ain't capped by the price...
Sad to say I don’t like the 545 prawn noodle as you appeared to like in the vid. Maybe I had it on their bad day? I dunno. I prefer the stall behind run by 2 aunties. I can’t remember the name. One line to order and the other line to collect.
Many have said this, but actually goated series. Creative, one of the few local content creators i look forward to 🎉
I actually prefer half prawns instead of whole cuz it's easier to tell if they cleaned the prawn properly (i.e. Removed the intestinal tract which from what I saw in your vid they didn't)
This is a potentially goated series, Alderic. Love Anthony Bourdain and I love your channel
thank you!

Great video as per usual alderic! Loving the new series

would you say that there is a preferred version? Or are people generally okay with any version of the buah keluak?
@@Alderic. According that what I know, there are 2 types of buah keluak. For the better one, there's no need to stuff the nut with meat because it is flavourful enough. For my family, we do not stuff it since we use the better ones. We use babi and not ayam too.

DO THE PRAWN NOODLE SERIES!!!!!
Prawn Noodle Series sounds great!
Will try the prawn noodles 👍
thanks for the support!
Great series! Looking forward to it!
Sung Si Kyung. Korean celebrity who is known as a foodie has 2 vlogs on his food adventures in sg. KEK Seafood now has a Sung Si Kyung set after his visit.
Agree. His food trail was pretty good!
Yes agree!
Great new series!

One of Tony's favourite restaurant is sin huat eating house, time to burst your budget!
What about Sin Huat Eating House? He rated it as one of the top places to eat in the *world*
yeah, Bourdain actually ate very extensively in Singapore. I had to limit the scope to just "Parts Unknown". Hopefully, we'll have any public figure that visited Sin Huat later in the series.

Drew Barrymore just visited Singapore in october last year. As far as I know, she had popiah at Maxwell hawker center and egg tarts at Tong Heng.

thanks for letting me know! I would love to do a nasi padang series one day.
The ayam buah keluak at Bumbu restaurant is worth a try (they give you the real thing)
The decor is also very nice
omg yes a prawn noodle serious would slap but damn this serious is starting out greatttt
Interesting series concept!
Nice. You went to my friend’s stall at Tekka! Hope u liked the prawn noodles!
Agree - 845 is prob the best old school prawn noodle in Singapore
I think can consider looking at his book where he passed by Maxwell Oyster Cake by chance and ate it
Actually I dunno if it's cos I've been gaslit so long that I've developed some half-prawn-stockholm-syndrome but I just feel more used to half prawns in my hae mee. Taking a whole prawn in with a spoonful of noodle just seems a bit too much now. Dayum
Next series best carrot cake black and white?
Or ban mian
Do another episode on Bourdain's No Reservations Singapore Episode in 2008!
I think we need a prata series.
Nice video. I am glad we finally move on from Mala. Full disclosure, while I am not a fan of 'ma' though I am a fan of 'la.'
I noticed that you did not go to Tian Tian for their chicken rice. 😉 I suspect it is because most Singaporeans think Tian Tian is over rated and for tourists only. 😝
thank you! I think I'll end up at Tian Tian sooner or later in this series. For this video, I wanted to stick with where he went in "Parts Unknown".
Most impressively, no stains on his shirt!
Alderic, you can try Mikey chen or mark weins’s reccomendations. They might sometimes glaze the food more than krispy kreme glaze their donuts. But can be a good gateway to international audiences
We need to do Mark Wiens
15:31 i can see that alderic is also a man of culture!
I don't know nothing about Singapore food but Tung Kee Noodle is S-Tier to me :3
Prawn noodles next week! 🤞🤞
I totally trust u bro.. soup prawn mee
PS: 🍽️不好的 我心情会很不好..
I too, always advocate for paying more for local food.

true. I'm not sure of the cost price of pomfret actually. I have paid a lot for it before but I have also gotten it cheap from the market.

New Series Babyyyy!
58 Prawn Noodle at bedok reservoir for ur prawn noodle series
o but this means any newer shops wouldnt be featured because these icons havent been here in awhile
i dont like half hard boiled eggs too 🤣
I love peranakan food too, especially ayam buah keluak, but i had no idea u could eat the black nut!
0:05 Also, Singapore is the only country to gain independence against its will.
Fine.. I saw Lin Jun Jie at Queen of Wok once
Gordon ramsay trio .
I hissed with you in the lower tax bracket
it's cold down here.
Only now has 2025 officially begun boiis saddle up 🎉🎉
i wonder what itachi loves to eat in Singapore
probably hangs out at the hawker centers with all the crows.
Ha! Singapore isn't younger than my parents. It's younger than ... me!!
Do a meat food review, like steaks, bbq meat...
Guan Hoe Soon’s chap chye is the best in Singapore. No lie.
Please do a prawn noodle series!
Hey Alderic, what about one of the OG YT food vlogger Mark Wiens? Specifically this video - th-cam.com/video/_Ttf--3axiY/w-d-xo.htmlsi=fVum70hX8gjOQWkZ
ooo that's a good one.

I think they don't even have to go ham. Just giving them an extra 2 dollars to work with would probably raise the national standard by a lot.
Fast food series in 2025?
12:22 kumiko :O
waiting for Prawn Noodle Series in 2025
I see new series, i like, share, comment, and enjoy free content until i win toto to join members
almost $100 for nonya food, really quite scammy and overpriced

Mee Kati seems like a more likely inspiration for Mee Siam than Tom Yum th-cam.com/video/S6TmTRH3aHs/w-d-xo.htmlsi=SyXgOCF4EMHkYMt5
