I remember buying four or five of their half-pound roast beefs, then eating them all in my motel room. I'm pretty sure I caressed and whispered to them, like Golem did with The One Ring. The next morning I got several of their biscuits and gravy. It was all as good as I'd remembered. I really wish they'd build one near me.

I am going to try this. Looks like a different use for my trimmings instead of sausage. I believe you might have too much #1 cure. I did not get the starting weight of your trimmings. 2 teaspoons of #1 cure weighs 8.4 grams. 7.64 grams of #1 cure is enough for 8 lbs of meat. The #1 cure ratio needs to be 150 PPM. To calculate, weigh everything in grams. To calculate: TOTAL WEIGHT (including added water) times .00015 = Y 6.25% (X) = Y Y ÷ .0625 = X After solving X is the exact amount of #1 cure needed in grams.

Roast beef was done when it reached 160°. After it came out NOTHING ELSE was done to the meat. This video has him making an au jus which is fine but the slabs Arby's used had a lot of juices..

I used to pull out long white tubes thinking it was worms but it wasn't worms, I'm guessing it was intestines. They cook in a gas oven on either 200 of 250 for either 4 or 6 hours. My memory is getting bad but it wasn't all day. Tastes awesome when they're over cooked! Still juicy but much more flavorful.
Was in St Louis last week for work and tried a Lions Choice RB sandwich, game changer/life changer. Arbys is fine but lions choice needs to go national!
I don't know why Arby's and Taco Bell haven't gone in on the whole beyond/impossible plant based meat bandwagon. Both restaurants versions of beef would taste exactly the same if prepared with meat substitutes.
