Can you use the excel document for several different parts without them chasing each time? For example if I made a part that was 200x300. And then I wanted a new part which was 500x800 ... would the original part change to 500x800 too?

The Excel file can control several different parts in an assembly, but if you insert the same part several times in an assembly, then change the values in Excel, all instances of the part in the assembly will be updated.
One solution may be to save a copy of the file with a new name.
