I think Odin sacrificed his first wife to obtain the soul stone. I think that only stone that he never obtained was actually the time stone; because as we saw in infinity war and endgame, the stone keeper would have likely showed him the possible futures where he collected all six. This probably scared him enough to change his mind and was why he decided to scatter the stones he had connected across the galaxy. Which his daughter viewed as the ultimate betrayal, as he sacrificed her mother to obtain one of them.
I disagree with the idea that Odin wouldn't have sacrificed Hela to get the Soul Stone. I think he did sacrifice something, and obtaining the Soul Stone is what changed him, not the act of sacrificing itself. I believe the Soul Stone has an effect on anyone who touches it, making them extremely reflective or empathetic, which could explain his transformation.
Ok, my hot take is that the throne of Asgard acts as a siphon pulling in the ambient energy/magic of the stones from the universe to create the "Odinforce." Odin no longer needed the stones and used the stones power to enhance and empower his favored. Thor (powerstone), Loki (time), Heimdall (space), and Frigga (mind). In the course of conquering the universe with Hela she found one of Null's Necroblades and like Gorr became tainted with its influence. I believe the final battle between Hela and Odin occurred on on Titan and its where Odin lost the Mind stone the course of the battle only to be found by a young Thanos. Hela gained the power of the "Odinforce" after Odin died because he enchanted it to pass to the true heir of Asgard. Since Thor had refused to be crowned as such it would fall to her and thus Asgard had to be destroyed to cut her power source. The Soul stone test, the enchantment on Mjolnir and the Odinforce all have this riddle like magic that appears to look the same and could be how Odin used the power of the soul stone to cast magic. I believe those empowered by the stone might also act as living stones, their powers drawing on the universe to empower them. Since the time line is broken when the stones are removed (big plot hole from endgame, since they are now "removed") I think existence forces them to be remade or reborn. Loki (time), Thor (Power), Love (Mind), Star Lord(Space), Scarlet Witch(Reality) and Adam Warlock(Soul) all make good candidates for for living Infinity Stones.

I think Odin's "power" as All-Father is itself akin to what the power one would wield would be if one had all the stones together. Just that his power is much more low key than that. Which is to say that in a limited way he seems to be able to change reality doing things like what he did to Thor in Thor's first movie (taking away his powers until certain provisions were met), banishing Hela, etc. I think this was a great strain to him without the supporting energy and power of the stones themselves, hence the "Odin's-sleep" that he would lapse into periodically. It seems rational that he might choose to augment his power by seeking the stones, and even access to a few might have bolstered his abilities along the axis of the focus of the individual stones he had. I agree with you that the challenge of making the soul-stone sacrifice might have been an impediment that he was not willing to undergo. Nice video!

In other words, the material that makes up the stones, is like the basic building blocks of the universe they reside in. And, this is the source of everyones abilitys from X-Men through Asguardians. Depending on the amount of each stone they naturally carry in them.
There is no proof that Odin ever got to even see the reality stone before Jane found it and moved it from where Odin's father had put it .. heck Odin didn't even know how to remove or take the reality stone from Jane showing he had very little knowledge about it because rocket took it from Jane with very little effort once he got within arms reach of Jane rocket took it from her without issue...but the all mighty powerful Odin could not remove it from her at all 😂 the inconsistent crap in these movies is really hard to figure out how they made such great movies from such idiots
