Sometime in their lifecycle the males turn to females and are not so sweet. I belive the island term would be "Mahoo" or "mahu". We learn a lot when we eat! @christopherbowen1836 Susan and I argue that point. I'm a cheapskate and weigh the quality over cost. I also look at the effortand skill of production. In the case of sushi, she views quality more importantly, and elegant simplicity. Overall, she paid for dinner! So I'm OK.

Actually, I had just watched a video on making Lomio O'io before that dinner where they stirred the meat to get a certain texture. I believe that technique is generally used in making meatballs or fishballs too. The working of chopped meat creates long, "transglutiminase" protein strings that help to bind and change texture.
