@@ivy12310depends on where you buy. In Japan you can get salmon for around $3 per lb and in America it’s around $12 per lb. But those prices can fluctuate a bit depending on the type of salmon you get.
Back in the days, when fridge wasnt invented, the fish may had some bad bacteria, then they found out the soya sauce killed that bacteria, thats why they dipped the fish into the soya sauce, and not the rice. Bonus fact: if the fish and rice etc. was wrapped inside the seaweed, then they would use their hands to pick up the sushi.
Back in the day when fridges weren't around yet, sushi served outside of the coastal regions were made of vegetables or dried/preserved fish. sushi was preserved with vinegar during the short term rather than soy sauce. some times, fish are smoked. the reason for this is the fact that soy sauce production was more complicated and it was valued more as a condiment rather than a preservative. vinegar, salting and smoking on the other hand, are more economical means of fish preservation. also, soy sauce does not kill bacteria. it can be used to kill bacteria with additional steps and time but simply dipping sashimi into soy sauce does not kill bacteria.
There is no and I mean NO!!!!!!!!!! Freaking way all those sushi rolls would cost $258 from a restaurant for delivery. You made about 70 rolls and I don't how much they cost in your home country but here in the USA sushi rolls like that cost at least $10+ each. So your total cost would be closer to $700-900.
honestly love the idea of the video but there's a few things wrong lol. 1. you should've cut the skin off before sectioning pieces off, sometimes sushi chefs wont even section parts just use the whole thing. 2. you missed the salmon belly, which could've been a couple more rolls if you cut that part off before sectioning 3. cut the ends off the cucumber, and cut the sides as close to the seeds as possible. the seeds don't give a great mouth feel but im glad ur not wasting it. alternatively u can make a smoothie out of the seeds. 4. salmon is easy to cut when it's still fresh not frozen. 5. the salmon was too thin in my opinion 6. lay down the salmon diagonally on top of the rolls so you can use less salmon for more rolls. 7. when you cut the rolls, slice it in half and line them up next to each other so you can make 4 cuts instead of 7, saving time 8. if you notice your knife ever gets caught in your rolls while cutting, just put more water on it and it shouldn't be a problem. i still love the video!!! these are just some of my opinions since i work in the sushi restaurant industry :)

This is my first time ever commenting on TH-cam because your video is amazing. The way you cook salmon is excellent. I watched the entire video without skipping a single part.
When I do Sushi I cut rolls in half and using the 1 inch boards on my butcher block cut it in to 3 parts. This leaves 4 super nice cuts and the 2 ends. I have trimmed them before and then using all the scraps make a scrap roll at the end. Kinda pretty cool roll. I whip my cream cheese with a bit of sour cream and pipe it with a bag. I also do the same with avocados as well. Whip them with a bit of lemon juice and its easy to apply on the rolls.
Well lets say it costs around 1k here in Brasil, (5/1 ratio exchange) 440 rolls. In a standard delivery service it would cost around 80-100 reals to buy 40 pieces of salmon rolls. For us is definitely worth to do at home i think, since you can buy one side of a salmon for around 120-150 reals and it makes half of what you made.
As good as it looks I hate sushi I like the cucumber and the rice but I had fish and I'm starting to like seaweed a bit but it's also great that he's donating all these food makings to orphanages charity's and food banks, he's giving things out to help I love these videos and I wish you would upload tons more 👇If U agree

Those rolls are huge compared to normal restaurant ones, so each box is at least worth 30 USD. 18 boxes + soy sauce and wasabi = 600$
