  • 사과 찹쌀떡 만들기 : 크림치즈 모찌 : Apple Chapssaltteok (Glutinous Rice Cake / Mochi) Recipe
    두 가지 색으로 사과를 듬뿍 넣은 찹쌀떡을 만들었어요~
    사과를 다져서 시나몬과 메이플을 넣어 풍미가 정말 좋아요.
    빨간 사과를 만들고 싶었지만 색소를 너무 많이 넣어야 할 것 같아서
    핑크 사과로 만족하기로 했어요.
    몰드에 달라붙을 수 있어서 전분을 조금 묻혀 가면서 만들어야 하더라구요.
    냉동실에서 2시간 정도 얼려도 실온에 꺼내면 금방 물렁해져서,
    얼려서 아이스 모찌로 먹으면 좋은 것 같아요~

    120g 찹쌀가루 (건식)
    15g 옥수수전분
    20g 설탕
    0.5g 소금
    230g 뜨거운 우유
    20g 무염버터
    식용색소
    | 크림
    150g 생크림
    100g 크림치즈
    30g 설탕
    2g 바닐라빈 페이스트
    | Apple filling
    290g Chopped apple
    25g Sugar
    20g Maple syrup
    10g Lemon juice
    2g Cinnamon powder
    | Glutinous rice cake
    120g Glutinous rice powder (dry)
    15g Corn starch
    20g Sugar
    0.5g Salt
    230g Hot milk
    20g Unsalted butter
    Food coloring
    | Cream
    150g Whipping cream
    100g Cream cheese
    30g Sugar
    2g Vanilla bean paste
    [만드는 과정]
    사과 조림
    1. 사과의 껍질을 제거하고 작게 다져서 냄비에 담아 주세요.
    2. 설탕, 메이플 시럽, 레몬즙, 시나몬 파우더를 넣고 중약불에서 끓여 주세요.
    3. 국물이 거의 졸아들 때까지 끓이고 냉장실에서 차갑게 식혀 주세요.
    찹쌀떡
    4. 찹쌀가루에 옥수수 전분, 설탕과 소금을 넣고 섞어 주세요.
    5. 뜨겁게 데운 우유와 버터를 넣고 섞고 체에 내려 주세요.
    6. 약불에서 골고루 섞으면서 볶아 주세요.
    7. 반으로 나누고 빨간 색소와 초록 색소를 섞어 두 가지 색으로 만들어 주세요.
    8. 비닐 랩으로 잠시 싸서 두세요.
    크림치즈 크림
    9. 생크림에 크림치즈, 설탕, 바닐라빈 페이스트를 넣고 휘핑해 주세요.
    10. 단단하게 크림을 만들고 짤 주머니에 담아 주세요.
    11. 찹쌀떡을 떼어내 밀대로 밀고 몰드에 올린 다음 크림을 짜주세요.
    12. 사과 조림을 넣고 크림을 짜고 찹쌀떡을 잘 여미고 가위로 잘라 주세요.
    13. 냉동실에서 2시간 정도 얼려 주세요.
    14. 몰드에서 찹쌀떡을 꺼내고 위쪽에 초콜릿과 잎사귀로 장식하세요.
