The cold slows yeast activity a lot. If you would have left that dough for 2 hours out of the fridge it would have given the yeast time to work, creating a lot of gases that would bubble in the dough and make it about double in size with all the air bubbles. Once you fry them they would have been more fluffy and would have had a deeper yeasty flavor instead of tasting so floury. If you still have the ingredients for another try I think you'll like them a lot more if you let the yeast ferment in warm air for the 2 hours. Thanks for the video, its cool to see you always going new places and trying new things as you travel.

I’ve been to NOLA 3 times and idk what it is about that city but i love it. The people are dope. Culture dope. Food great. The vibe is just great. Love going there and talking to the people who have been there for ever about the history. Also exploring outside of just the French quarters. You learn how to properly pronounce New Orleans and all kinds of dope stuff.

Louisiana is one of the most beautiful places in the country - but the roads near Shreveport/Bossier City are some of the worst! We traveled with a 37' fifth wheel from DFW to Florida, to San Diego and Maine - Louisiana was easily the wort. Loving the trip! If you're reading this and want a great State Park for a stay in New Orleans, try Bayou Segnette State Park.

We lived and worked in the CBD (Central Business District), one street over from the quarter. We were fortunate to have secured parking, but it was still a challenging situation. If we had any issues with our gate opening/closing it was not good. People would use our parking lot as a latrine. Also, found used needles, on our sidewalk stoop often and had to ask people to move on from sleeping there over night. I cried so many times and didn’t want to have them move, but we had to for the business and safety of our family. I love New Orleans and always will, but we had to constantly be vigilant. It was a bit too stressful and we opted to buy a house in Covington and travel in/out. On a lighter note we make beignets with our daughter from canned biscuit dough🙃, but usually bought them at Cafe Du Monde.

Cafe Du Monde is a great place to start a nice relaxing day in the Quarter. The Aquarium, Harrahs (if you're into casino stuff) and the D-Day museum (again, if you're into that).
But definitely Cafe Du Monde. And Central Market across the street for a po-boy.
I don't know if it's still the case, but Cafe Du Monde (the e is silent, like MONDay, but without the ay) used to be open 24/7.

Your powdered sugar over the van reminds me of a road trip to NO in the 90's . My brakes started to fail the day before coming into N.O. from Detroit . I decided to grab a hotel and schedule a brake job at Midas near the hotel for the next morning. I take it in and it's warm and sweaty so I leave the windows cracked about 2 inches all the way around. Rather than waiting in the shop lounge , I went for a walk and came back to find all the garage bays closed but the windows on the bays looking like someone had painted them in a foggy whitewash. Turns out someone in the shop bumped a big chemical fire extinguisher , it fell off it's mount onto the floor next to my car with enough force to pop the top off the extinguisher blowing the insides of the unit into the air but mostly inside my car. That was a surprise, they finished up the car and called down the street to a detail shop to have people ready to detail it as soon as I got it there. I guess stuff just happens on road trips.

I went down to the French Quarter this past summer and stayed in one of their boutique hotels. They are the actual initial hotels of the French quarter before they became hotels they were the king and queens private homes that came from France and Spain and other destinations before America was America. They are gorgeous to stay and I have stayed in two different boutique hotels and I had a fabulous time in both. They are right on the main streets of the French quarter however, parking was a thrill. Only one of the multiple boutique hotels have their own parking lot close to the actual hotel, the second one I stayed in their parking lot was eight blocks away so you had to check in go park and then roll your suitcases back to the hotel for eight blocks. I will definitely be back to visit New Orleans and the French Quarter. Great video it brought back a lot of memories when you rode through the street on your E bike.

I’ve had beignets there! ❤ But if you want a real treat you have to head up to the New England area and have a malassada. Somewhat similar to the Hawaiian Malasadas, but so much better!

Next time check out The Fly park parking lot behind the zoo uptown. There is a public bathroom, free, on the river and I felt safe there but there was no one else around. It’s a long bike ride to the quarter but scenic or a cheap Uber ride. I knew about it cause I lived in the city for years. Hope you had fun

If you ever go back to New Orleans, you have to try the High Hat Cafe in the Garden District in Uptown. Easily one of my favorite restaurants I've ever been to. Everything I've had on their menu is delicious, but the fried chicken is probably my favorite and the best fried chicken I've ever had.

Hey Ryan, try using both holes in the vent fan cover to connect both inlet and exhaust of the AC next time.
Right now, hot and humid air from outside is constantly coming into van's interior thru the open hole of the vent. By isolating exterior air to only flow within closed AC loop will make inside of the van much less humid and bearable. Of course, van being more air tight will help maintain the humidity and temp
