    Hey, awesome way to fillet trout which avoids wastage of the meat under the ribs. I’ve seen heaps of other people on TH-cam just completely disregard the rib meat and only fillet the meat on top. This to me is disrespecting the fish which you have just killed as well as devaluing it’s life, as you are not fully maximising the meat you can be getting nourishment and sustenance from. Love your way of filleting and have adopted your exact style. Keep up the awesome content.

      @@nomoClowns The pin bones probably. They’re small and you can look up videos on how to remove them, but it’s like cutting a V into the fillet and scraping them out with your finger. On really large trout you can just remove them with pliers.

    • @tonylwright
      @tonylwright 4 ปีที่แล้ว +7

      @@dywildatheart there's a deboning video where a guy that works at a fish market or something shows you how. I've been doing it that way for a year or so now. Just a cut down each side of the pin bones after locating them, then stick your finger under the meat at the head end and push it and the bones will slide right out with little meat waste. The key is making your two cuts down to the skin without cutting through it. It's easy once you do a few. I now debone all my trout before smoking them. The larger ones in the 4+ lb range have pin bones big enough to pull out with tweezers if you choose to do so. But I'm a fan of simple and fast. And like I said, the meat waste is very little. The flip side of that is dealing with those bones in your food, so I'll sacrifice a little meat.

      I find cutting the pin bone out the same way we do with snapper in nz... always boneless.
      Or pull pin bones after fish has been smoked is always easy as the flesh shrinks the pins stick up!

      I eat a lot of smaller trout that size, and I dont find the pin bones intrusive at all, rarely notice them. On larger lake trout or salmon they are far bigger/thicker and should be removed, but for trout under 18" I dont feel it's neccesary imo

    What do you do about the pin bones? Just remove them before cooking?

    What about the other two rows of bones running the length of the filet under the rib cage

    With smaller fish and pan frying etc. The only thing I would add: Scale the fish before starting the whole process.

      No need to scale trout, you can eat the skin (unlike most other fish)

    After it's prepared the way you did it, you can also smoke the fillets. There is a secret method that makes the bones crumbly, so you can basically eat the bones. If I find out how it's done, I'll do a tutorial.
