If you want something extra for a little bit a effort don't get boneless thighs, buy regular chicken thighs and debone yourself, they're cheaper and the bones and skin can be frozen to add to a stock or you can crisp the skin for topping on your dishes, I can't wait to try this dish next week thank you so much.

Thanks, I just realized your peanut sauce is very similar to Apple 🍎 Bee's Thai shrimp salad, which I miss, so I also think on a special occasion shrimp would work well too.
I love peanut butter based sauces, so this sounds really good. I'm wondering if some crispy fried cauliflower would be another vegetarian option in place of the tofu? Or swap out shrimp or pork for the chicken, maybe.
I tripled the sauce recipe because I thought it wouldn’t be enough but it’s way more than enough. Would I be able to store the sauce in the fridge separately for a 5-7 days until I make another batch?
You can make tamarind paste at home and store it in the fridge for 2 months and freezer for 6 months. Try and get seedless and cleaned tamarind. The only tedious part is cleaning the tamarind rest is easy. I usually take 500gm of tamarind soak it in warm water in 2 batches in 2 different bowls then I squeeze the soaked tamarind pulp. I do this twice or thrice. Then I put the tamarind water in a heavy bottomed dish and start heating it. I add loads of salt cos it will act as a preservative. I blend the leftover pulp to a smooth paste and it to the boiling tamarind water. Now it only needs to be stirred occasionally till all the water evaporates and you ate left with a thick sludge. After it cools decant into airtight jars and store in fridge or you can freeze them in ziploc covers in the freezer.

So once a month or once in two months I make the tamarind paste and squeeze about 30-40 lemons and store the juice in a bottle in the fridge. It lasts for 6 months without spoiling.

Haha, I definitely have A LOT of sauces too. You could definitely use that instead. It will change the taste a little bit but I think it would still be delicious!
I just made this for dinner, used frozen broccoli and snap peas, I also used cauliflower rice. Husband said it was alright, nice and crunchy.

I add crunchy peanut butter, chopped green onions, cilantro, and lime juice and BAMMM- it’s a Thai dressing. I use that to make Bahm Mi Tofu sandwich.
I add some sriracha, ginger & a bit of minced garlic. Soooo delicious!

Sambel oelek base is chili garlic basically, with peanut sauce it'll taste like satay. So it'll be okay, I think.
