Every household region has their own version of making masale bhaat.. humare ghar main pehle pyaaz ko lamba kaat ke golden brown hone tak try Kiya jaata hai, phir khobra (dry coconut) grated coconut lo halka brown karo phir inko adrak aur lehsun aur dhaniya ke saath paste bana lo. Phir tel according to your masala quantity of rice lo jeera mohari jo tadka you wish do tel paste add Karo (vatan) bolte hai usko. Add masale jo bhi use karte ho haldi namak. Achhe se mix well and bhun lo Phir matar ya phir pavta( local hai If you're from Maharashtra English main kya bolte hai I have no idea- usko hum pehle namak daal ke boil kar ke rakhte hai) add that rice mix well add water according to you and done. Pressure cooker main kar rahe ho toh ye and if bartan main kar rahe like patela handi toh bich bich main check Karo aur water level bhi check karte raho. And niche tava rakhna.
It looks so much like Karnataka's neer dosa, Maharashtra's amboli, and Goa's Polle - but with banana leaves! Amazing! I live in a Gujarati-dominated locality of Mumbai + have grown up here + am v close to Soam and Swati Snacks who according to some commentors specialise in panki but I've never heard of it...until now! I am from south gujrat this is our traditional recipe too but we add cucumber or pumpkin and little jaggery we call it panela......try with cucumber and jaggery it will taste better
Sir, it's maharashtrian kokan special recipe called Pangi. It is made both ways sweet and salty. In Sweet pangi we used milk, jaggery and rice flour and mix it and eat with ghee and jaggery as well lasun chutney or mirchi lonche. Salty Pangi is made as u have shown. One of my favorite dish.
