Ingredients
1/2 cup of oil (your choice)
1/3 cup of vinegar
1/3 cup of soya sauce (dark, mushroom flavor)
1/4 cup of lime juice
1/2 cup of a freshly squeezed orange preferable Florida oranges
3 teaspoons of Pimento allspice
3 teaspoons of salt (or to taste)
1 tablespoon of black pepper
1 1/2 tablespoons of brown sugar
1 1/2 teaspoons of cinnamon
1 teaspoon of coriander powder
1/2 teaspoon ground cloves
2 tablespoons of fresh thyme leaves (or 3 teaspoons of ground thyme)
3 stalks of small spring onions scallions 1/3 cup (chopped)
2 tablespoons of fresh ginger (chopped)
1 cup chopped onion
3 large cloves of garlic 1/3 cup (peeled)
3 scotch bonnet peppers ( substitute habanero, Jamaican pepper)
Process
Process all the ingredients into a smooth paste
Store in an airtight bottle till needed

I made the sauce yesterday and marinated chicken for 24 hours. The sauce is thick and clings to the chicken. I baked it in the oven and it was absolutely wonderful. I have a great jerk recipe now.

This recipe was soooooo bomb me and my family are trying it again for the second time in 2 months and I've been on vacation for 3 weeks soooooo ummmmm yeah its really good. Also I come from Chicago and Los Angeles so our standard for Authentic Caribbean flavor is off the rack being that we have a large island influence in Chicago as well. The Pimento Berries are very hard ,so it is best to grind it in a Hamilton Beach coffee grinder.Also grind a little bit of Nutmeg.

Hi there! I've used both Apple Cider and Red Wine Vinegar over the years - both work well.

I use your jerk sauce , it wasn't hot at all but I just the heat a little by adding 5 more peppers to make it hotter. when you take out the seeds from the pepper , it's not hot .

Excellent recipe!! Had all ingredients and I made a batch that I used on a hind leg of baby goat. Cooked it looooow and slow. Was soooo good!!

Add a little extra cinnamon, clove and pepper instead.

It's not the same but just use 2 - 3 regular chillies.

There’s more flavor in the stems of the thyme and since it’s green, you could just throw it all in the blender.

Your own twist on it or your friends twist - but I don’t think this is truly authentic. I am Indian, and a chef actually I work for a very well known Michelin starred Indian restaurant here in London.
Anyway, just wanted to see how you make it as I do enjoy jerk chicken and go to some very good places here to eat jerk chicken... I wouldn’t say they use things like coriander powder in their marinade that’s actually more of an Indian thing to use. I’m pretty sure they don’t use cinnamon in the marinade and actually nor orange juice and probably not even ginger. Still, you got the recipe from someone else that’s clearly added their own twist and take on it- nothing wrong with that.
Also remember the key element is the smokiness that comes from jerk chicken, make sure to get it really charred and smoky... cheers.
Thank you!!!! I'm honored esp since you work in a Michelin star resto wow! Yes there is a LOT of debate about the use of Coriander and Cinnamon - some swear by it and it's a no no for some. There's also a lot of debate about the scotch bonnets. Ultimately, this recipe is incredible and yes I love to stick this on my grill to get that smokiness. In the summer, I smoke the scotch bonnets before use. Cheers!
Kravings You’re welcome. Also smoke amongst wood chips, even cook it in the oven to the point it’s nearly cooked and finish it off on a bbq... just a tip as sometimes people find it hard to cook chicken straight on a bbq
It’s all about cooking on direct and indirect heat but that’s another issue, thought I’d give you the tip.

Welll, luckily Jamaican pimento as you call iit, is not only avsilable in Jamaica but in the Carbbean, Central and South América as well. Sure, it has other mames such as sweet pepper, fat pepper, bay rhum pepper, etc.

This is a marinade. You can actually cook the marinade down, it will thicken and turn darker and you can then use it as a sauce.

I would like to comment that the best marinade sauce is different than the best dipping or finishing sauce. In my experience you want to add salt and vinegar to the marinade (as well as the Caribbean sunshine), but with the finishing sauce you want to avoid vinegar and excess sauce while enhancing the citrus. I would avoid the salt and swap the vinegar with fresh squeezed orange juice or a mixture or orange and lime juice. I would also avoid any scotch bonnet pepper seeds or the internal white membrane and perhaps add an extra teaspoon to tablespoon of fresh ginger. I would also go heavier on the fresh Thyme, but I simply like fresh thyme (like I always double the fresh basil on a Thai or Panang curry).
Of course this is the opinion of a fat white man, but a fat white man grown fat on good food.

Leave the scotch bonnet seeds in.. then two will be enough
You need the skin and flesh actually. It's what gives the sauce body. The seeds just give heat.
An Arab making a jerk chicken video is about as authentic as a Chinese person making a taco video.

Next time blend the pepper with the seed that where the spice is

The only time I see that, is when they put some to the side (prior to marinating it in the meat) and make a jerk sauce with it, to go with the meat after it is grilled.
not sure about adding cinnamon. we don't really use that on our meats. but all in all I liked it. try adding way more thyme and some escallion (Green onions)

Sorry, but most of you guys are commenting about not using cinnamon. Please read your Caribbean label ingredients when you are cooking. Cinnamon is one of the foundations for great Caribbean flavours and scent. There is a reason our home and foods smell different to African, Indian and Chinese as to the herbs and spices we use. Get educated........

I loved reading your comment, I could sense your dismay - ha ha - this recipe was given to me by someone who is married into a Jamaican family. As par as Scotch Bonnets are concerned, we get these in Canada labelled Scotch Bonnets. Thank you!
@@KravingsFoodAdventures I understand that very clearly, but as a Jamaican I can tell you it does make a difference. Some peppers can kill the taste of the food, scotchie as the unique property of both heat and sweetness. Preparation is key in doing jerk, but it also comes down to your method. Cinnamon is optional. And its not used in everything here. Nothing is wrong with your variation, the main ingredients is what makes jerk jerk!! Happy cooking!

Jerk is a very complex blend. There are many ingredients but all play a part. You can make ahead a big batch and freeze if you like!
