@Matthew Augusta ok so I modified the recipe just a little bit, mainly because I didn't have all of the ingredients you used. I marinated the chicken in sesame oil, soy sauce, salt, pepper, baking soda, sugar, curry powder, ginger powder, and sesame seeds for 20 minutes. I seared the chicken, as you did, and for the sauce, I used the 2tbsp butter, minced garlic, ginger powder, let it cook for 20 seconds, added soy sauce, garlic chilli paste, curry powder, red wine vinegar, honey, and the juice from a jar of red pickled onions. I thickened it with flour, then added back the chicken to coat it with the sauce. I drizzled a little more sesame oil and sprinkled some sesame seeds on it, and served it on a bed of white rice. I am a home cook, so I have cooked many things. I gotta tell you, this is, hands down, the best dish I have ever prepared, and is now my all time favorite way to cook chicken, and it's super simple too! Corn starch is traditional for Chinese inspired recipes. You might want to try potato starch as a substitute.
