    I’ve made a similar sauce for apples, but I’ve never canned it. Looks like a good treat to have on hand.

      We love to have some for this time of year as well as give some away. I normally make pumpkin butter too but this wasn't a good year for our pumpkins.

    Thank you for this video and good explanation! You had the crock on high temp, correct? Have you tried stopping after 5 hours? I would probably want my sauce to be a little more pourable- how much time do you suggest for cooking it for it to be the right color/flavor but not as solid?
    I have seen others do it on low for 6-8 hours. Does it make a difference?

      We heat it up when we open a can so it's still somewhat pourable at that point. If you are wanting it pourable at room temp then you'll have to add something to thin it like water. Maybe mix it with a simple syrup. I've made it in less time on the stove. Experiment with it and see what happens. :)

    How long is it shelf stable without opening? I worry about the dairy being safe.

      Canned sweetened condensed milk unopened lasts about 2 years officially. Many people make this without ever opening the can. I prefer not to because I had a can bulge during the process once and thought it might explode but unopened, it should last at least 2 years. I rotate out my canned goods every year so that nothing is ever over a year old. So making it this way in jars, 1 year at least but it rarely lasts even 6 months around here before it is eaten. You are recanning something that was already canned so I have no worries.

      @@TexasHomesteaders thanks, yes I meant to ask how shelf stable it is after doing it in jars and the water bath process. I keep hearing so many mixed answers about the safety of processing dairy, the risk of botulism, etc. and I don’t want to make anyone sick.

      My children are all adults. I have been making this for them for over 20 years. No one has gotten sick. We do generally heat it before eating because we like it warm on our apples or ice cream.

    If adding butter/sugar - how much?

      You'll have to experiment with that. Both will scorch. Start small.

      If you are asking me how long it is shelf stable, then it should be shelf stable as long as it stays sealed. However, I make a batch every year and they are used within 1 year.
