    Hi dear
    For idli the ratio is 1:2
    And for dosa it's 1:3
    And for fermentation keep the batter in your microwave....but first preheat your oven...
    OR you can keep it in a hot place like-- wheat aata container

    Iske saath 2 spoon poha bhigoke dalo.. dosa accha banega... aur Idli ke batter banate vakth ek choti katori cooked rice dalo... idli soft banega

    I have never faced any issue in fermentation, every time I prepare dosa batter it comes out really well. U just need to use 3:1 ratio of rice and urad dal and 1 spoon methi Dana make sure to soak and grind dal and rice separately and then in daal u can soak little bit poha (optional) and 2,3 red chillies, after grinding mix them with your hand also add 1 spoon salt, later you can add more.After mixing the batter really well keep in the microwave no need to preheat or anything in 10 to 12 hrs your batter will be ready. I too live in Bangalore and dosa fermentation has never been a challenge for me. Try once and let me know did this work for you or not. I am your new subscriber btw❤

      From Bangalore, if u are adding salt before fermentation pls do avoid that and try. U can add 1 tsp sugar and 2 tbsp oil these help in fermentation. Also use idli rice for bothe dosa and idli . 3 cups rice 1 cup Urad dal and then u can add a handful of cooked rice while grinding

    U should soak urad dal & rice separately & grind also separately. Then mix both bater & whisk for some time. Then leave it for fermentation.
