Davy Jones stopped _actually_ ferrying souls to the underworld after only 10 years, when he waited on shore for Calypso and she didn't show. That caused he and his crew to be slowly joined with the sea.
One thing not in the exchange between Beckett and Jack that was cut, it is in the deleted screns, Jack says, "people aren't cargo mate" which alluded to that Jack helped free slaves. Hence the people who were mourning at the end of the second movie, they are not just random people in the grove, those were people he freed.
And that was possibly the mark that Jack to Beckett which was the humiliation of having a business ruined by one of his own workers, resulting in Beckett also giving Jack a mark which was making him a wanted pirate by branding him in the arm with the letter P for pirate and sunking his ship the Wicked Winch, which was risen later from the ocean by Davy Jones in a deal with Jack and renamed the Black Pearl.

You'd LOVE a gritty pirate series called ( Black Sails ) ... It's like Game Of Thrones but pirates .. Drama/ Gore / Boobs and all. hehe Also it's historically accurate about the end of the pirate era.

Although a fun fact about that movie is Penelope Cruz's sister did a lot of her wide shots because Penelope was pregnant during filming
