    Tip, use wholemeal to get your starter going. Most of the yeast is on the bran in the fields and it is left at the mill when the white flour is extracted. Wholemeal flour has more nutrients for the yeast too.
    Store the starter in the fridge. Get it out, feed it, and after about four hours it is ready to use. Put the remainder in the fridge where it will keep quite happily for about a week without a feed.
    No discards are required with that method.
    And as a baker, do you mind me saying? Respectfully, What on earth are rolling your dough out with a rolling pin for? It de-gasses the dough far too much. Please, do your self a favour and watch some videos on dough shaping. Shaping is where your crumb structure is developed.

      We each bake as we choose.
      Just some of us take the trouble to learn about bread baking before holding forth with a video and presuming to teach others.
      Just learn the basics of bread making, ignore me.
