    Tip, use wholemeal to get your starter going. Most of the yeast is on the bran in the fields and it is left at the mill when the white flour is extracted. Wholemeal flour has more nutrients for the yeast too. Store the starter in the fridge. Get it out, feed it, and after about four hours it is ready to use. Put the remainder in the fridge where it will keep quite happily for about a week without a feed. No discards are required with that method. And as a baker, do you mind me saying? Respectfully, What on earth are rolling your dough out with a rolling pin for? It de-gasses the dough far too much. Please, do your self a favour and watch some videos on dough shaping. Shaping is where your crumb structure is developed.

      @@PROBIOTICSFERMENTATION-e3l You don't have to. We each bake as we choose. Just some of us take the trouble to learn about bread baking before holding forth with a video and presuming to teach others. Just learn the basics of bread making, ignore me.

    I know this a dumb question but how do we know the raisins are non- oil coated? Does it matter the size of the jar? Thank you

      ・non-oil coated raisins If the package does not specify “non-oil coated,” look for an ingredients label that lists only “raisins” with no mention of oil. For oil-coated raisins, oil will float to the surface when they are placed in water. ・jar Any type of jar will work. However, if you live in a region prone to mold, I don’t recommend using a jar that’s too large. Having too much empty space in the jar increases the risk of failure. Keeping the jar about 70-80% full with water is ideal and easier to manage. Thank you for your comment!

      @@ChrisYoung-zo4md It’s hard to generalize, but if your bread-making turns out better, the main reason is often that the yeast water’s fermentation power is too weak. When cultivating yeast water, adding a little sugar or honey (around 5g) can help, and you’ll know it’s ready when you see lively bubbles. From my experience, during the first fermentation, it feels like there isn’t much yeast naturally present in the house yet. However, after repeated fermentations, it seems like it works effortlessly no matter what you do.
